An unusual combination of simple ingredients that render a spicy, tasty soup that's ready in less than 45 minutes!

1 teaspoon vegetable oil
1 small onion, chopped
1 large sweet potato, peeled and diced
1 clove garlic, minced
4 cups chicken broth
1 teaspoon dried thyme
½ teaspoon ground cumin
1 cup chunky salsa
1 (15.5 ounce) can garbanzo beans, drained
1 cup diced zucchini
½ cup cooked rice
2 tablespoons creamy peanut butter

Steps:

  • Heat the oil in a stockpot over medium heat. Saute onion, sweet potato, and garlic until onion is soft. Turn down heat if necessary to prevent burning.
  • Stir in the chicken broth, thyme and cumin. Bring to a boil, cover and simmer for about 15 minutes. Stir in salsa, garbanzo beans and zucchini. Simmer until tender, about 15 minutes.
  • Stir in the cooked rice and peanut butter until the peanut butter has dissolved. Serve hot with pita chips and a green salad.

African Yam Stew - Forks Over Knives image

Two popular vegetarian soups of Central Africa were the inspiration for this stew. In this region, sweet potatoes, beans, chili peppers, onions, ginger, garlic and peanuts are common ingredients. The peanut butter makes this a creamy stew, but there is only a small amount per serving. To decrease the richness serve over a whole grain or use only ¼ cup of peanut butter. Feel free to kick up the heat by using jalapeno pepper or more red pepper flakes.

Number Of Ingredients 16

½ cup water
1 onion, chopped
1-2 tablespoon(s) Anaheim or jalapeno pepper, minced
1 tablespoon ginger, ground
1 tablespoon garlic granules
2 teaspoons cumin, ground
2 teaspoons coriander, ground
¼ teaspoon crushed red pepper
6 yams, peeled and chopped
2 cups vegetable broth
24 ounces tomatoes, chopped
14 ounces garbanzo beans, drained and rinsed
14 ounces black eyed peas, drained and rinsed
½ cup almond or peanut butter, unsweetened
1½ cup corn
6 cups collards, chopped

Steps:

  • In a large pot, sauté onion and pepper with water for 5 minutes or until onions are translucent, stirring occasionally
  • Add ginger, garlic, cumin, coriander and red pepper.
  • Cook and stir for 1 minute.
  • Mix in yams, vegetable broth, tomatoes, beans and nut butter.
  • Bring to a boil, reduce heat and simmer for 20 minutes.
  • Stir in corn and collards and cook for about 10 more minutes, until yams and greens are tender.
  • Serve over brown rice or other whole grain.

I really love the combined taste of ginger and cilantro. I pair a big bowl of soup with a whole wheat pita and a green salad. It can take some time to chop all of the veggies, but it's fun to make on a cold weekend day and the colours and smells are wonderful. I'm a slow cook, so the prep time might be shorter for you.
