It’s easy to get bored with a simple baked potato. But these babies are too fabulous for words! The secret is the red-skinned potatoes.

2½ pounds medium-sized red potatoes, scrubbed
6 cloves garlic, chopped
¼ cup extra virgin olive oil
1 tablespoon Kosher salt
Freshly ground black pepper

Steps:

  • 1. Preheat oven to 375°F. 2. Carefully slice each potato crosswise, about 8 times or every ?-inch, but not slicing all the way through to the bottom, leaving about ¼-inch intact on the bottom.  3. Place potatoes on a large rimmed baking sheet and sprinkle garlic evenly over all potatoes. Drizzle with olive oil and sprinkle with salt and pepper.  4. Steps:

  • Preheat your oven to 400 F (204 C).
  • Set each potato half, cut side down, on a clean work surface.
  • Cut each potato half crosswise into 1/4-inch-thick slices, making sure to cut only 3/4 of the way through.
  • Transfer potato halves to the nonstick baking sheet.
  • Brush each potato half with 1/4 teaspoon oil and sprinkle each with 1/4 Italian seasoning.
  • Bake in the preheated oven until tender, about 30 minutes.
  • In nonstick skillet heat remaining oil. Add pepper and cook over medium-high heat, stirring frequently, until tender-crisp, about 30 seconds. Remove from heat and stir in remaining Italian seasoning and the cheese.
  • To serve, spoon pepper mixture evenly over each potato half.
