How to Broil a Lobster Tail Recipe - Food.com image

Basic directions on how to broil the tail only. The finished product looks like it does when served in a restaurant. (I cut this from a magazine years ago). Have a look at the photos as a guide.

4 ounces lobster tails
1/2-1 tablespoon butter
garlic salt
pepper
paprika

Steps:

  • Line a broiler pan with foil pressing it into the grooves of the pan.
  • Cut a line down the center of the top of the shell (not the underside of shell), stopping just before the tail fins.
  • Pull shell apart leaving it intact, and gently pull lobster meat out, cradling it on top of the now opened shell.
  • Using a sharp knife, make a small slit down the top of the meat and spread it by running your finger through the lobster meat.
  • Fill crevice with butter, then sprinkle with garlic salt, pepper and paprika.
  • Broil 3-4 inches from heat for approximately 1 minute per ounce.
  • (ie: a 4 oz tail would take about 4 minutes).
  • Watch carefully.

We tried lobster tails every which way -- steamed, baked, grilled, broiled -- and this is our favorite. Fast and foolproof, this recipe is your ticket to an impressive main course in minutes.

Four 5- to 6-ounce frozen lobster tails, thawed (see Cook's Note)
1 stick (8 tablespoons) unsalted butter, at room temperature 
1 tablespoon chopped fresh parsley 
1 tablespoon minced shallot 
1 teaspoon lemon zest 
Kosher salt and freshly ground black pepper 

Steps:

  • Preheat the broiler. Place a wire cooling rack inside a rimmed baking sheet. Cut the top shell of the lobster tails lengthwise down the middle with kitchen shears. Then, using a knife, cut all the way through the tails to split into 2 pieces. Place them flesh-side up on the prepared baking sheet.
  • Mix together the butter, parsley, shallot, lemon zest, 1/2 teaspoon salt and a few grinds of pepper in a small bowl until well combined.  
  • Spread 2 teaspoons of the compound butter on the flesh of each lobster tail half. Broil until the shells turn a bright orange, the flesh is opaque and cooked through and the tails begin to curl, about 4 minutes.  
  • Transfer the tails to a serving platter and top each half with another teaspoon of the compound butter (save the remainder for another use).

  • Preheat a grill or grill pan over medium heat. In a small bowl, whisk together melted butter, lemon juice, zest, chives, parsley, garlic, and salt. Using kitchen shears, cut top of lobster shell from meaty portion of tail. Using a knife, cut halfway through meat down the center, without cutting all the way through. Insert a skewer lengthwise through the lobster to keep lobster from curling up when cooked.  Brush all over with oil and season with salt and pepper. Grill flesh side down until lightly charred, about 6 minutes. Flip lobster and dollop a spoonful of butter mixture on flesh side. Grill until just cooked through, about 5 minutes more. Remove lobster from grill and sprinkle with red pepper flakes. Serve with lemon wedges.
