Grilled Cornish Hens Recipe: How to Make It image

I like experimenting with different foods and adapting them to my own tastes. These hens are one of my specialties, an entree I concocted by combining a few different recipes. The moist meat has a pleasant grilled flavor that's accented with cloves and ginger.—David Baruch, Weston, Florida

1/4 cup butter, softened
2 green onions, finely chopped
2 tablespoons minced fresh parsley
2 tablespoons grated fresh gingerroot
3 garlic cloves, minced
1 teaspoon salt, divided
1/2 teaspoon pepper, divided
4 Cornish game hens (20 to 24 ounces each)

Steps:

  • In a small bowl, combine the butter, onions, parsley, ginger, garlic, 1/2 teaspoon salt and 1/4 teaspoon pepper. , Rub mixture under the skin and over the top of each game hen. Sprinkle remaining salt and pepper inside the hen cavities. , Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Prepare grill for indirect heat, using a drip pan. , Place hens breast side up over drip pan; grill, covered, over indirect medium heat for 45-60 minutes or until a thermometer reads 180° and the meat juices run clear.

Cornish Game Hens with Garlic-Mint Butter

3 garlic cloves
1 teaspoon kosher salt
½ cup/115 grams (1 stick) unsalted butter, softened
1 tablespoon finely chopped fresh mint leaves
½ teaspoon finely grated lime zest
2 teaspoons fresh lime juice
½ teaspoon prepared chili powder
¼ teaspoon freshly ground black pepper
4 Cornish game hens, each 1¼ to 1½ pounds, giblets and wing tips removed

Steps:

  • Prepare the grill for indirect cooking over high heat (450° to 550°F).
  • Roughly chop the garlic and then sprinkle the salt on top. Using both the sharp edge and the flat side of a knife blade, crush the garlic and salt together to create a paste. Put the paste in a small bowl and add the rest of the butter ingredients. Mix well.
  • Working from the cavity end of each hen, run your fingers between the skin and flesh of the breasts and legs to loosen the skin without tearing. Divide the butter mixture and use half under the skin of each hen, massaging from the outside to spread the butter mixture evenly over the breasts and legs. Spread the remaining butter over the entire surface of the hens. Truss the hens with butcher’s twine.
  • Brush the cooking grates clean. Grill the game hens over indirect high heat, with the lid closed, until the juices run clear and the meat is no longer pink at the bone, 45 to 55 minutes. Remove from the grill, loosely cover with foil, and let rest for 3 to 5 minutes. Serve warm.
