Quick and yummy breakfast omelette.

Yield Serves 1

Steps:

  • Beat the eggs and put the pan on medium heat. Tip in a little butter, and let the brown a bit.
  • Put the beaten eggs into the heated pan.
  • Let it sit for 20-30 secs, then start moving the egg inward with a spatula, covering the "open spots" in the pan with the liquid egg.
  • Do this continuously until it begins to set.
  • Angle the pan around to move the still runny part of the omelette move to the edge.
  • Salt and pepper to taste, and add the grated cheese on one half.
  • Fold the other half over the cheese with a spatula, slide it halfway onto the plate, and fold it over again.
  • Slide onto plate, garnish with a leaf of parsley, and serve immediately.

½ tsp olive oil
¼ cup diced onions
¼ cup diced red pepper
¼ cup diced mushroom
½ cup baby spinach
¼ tsp chopped fresh thyme
Cooking spray
2 eggs (whisked with a pinch of salt and pepper)

Steps:

  • Heat olive oil over medium heat in a small omelet pan. 
  • Add onions, peppers, and mushroom and season with a pinch of salt and pepper. 
  • Cook for 3-5 minutes or until crisp tender. Add spinach and thyme and toss to wilt spinach. Remove to a bowl and wipe pan clean. 
  • Spray with cooking spray and heat over medium heat. Add egg and swirl until bottom is set and top is nearly cooked through, about 3 minutes. 
  • Add veggies, fold over omelet, and cook for an additional 1-2 minutes to set.
