1-pint cherry tomatoes
1 1/2 Tbsps olive oil, divided
3 fresh garlic cloves, chopped
1 tsp dried oregano
sea salt and freshly ground black pepper, to taste
1 (8-oz.) block feta cheese
2 large zucchini, spiralized into zoodles
a large handful of fresh basil leaves picked and chopped

Steps:

  • Preheat your oven to 400 degrees f.
  • In a 13x9-inch baking dish, stir together the cherry tomatoes, 1 Tablespoon of olive oil, garlic, oregano, sea salt, and pepper.
  • Make some space in the center and add in your feta cheese. Drizzle the remaining 1/2 Tablespoon of olive oil on top of the feta.
  • Bake, until the cheese is soft and golden on top and tomatoes are roasted and bursting, about 30 minutes.
  • While the feta is baking, thoroughly wash your zucchini squash and trim off the ends.
  • Using a spiralizer, create zucchini noodles; aka zoodles. If you don't have a spiralizer, you can simply run a vegetable peeler down the length of the zucchini to create thin ribbons.
  • Remove the baking dish from the oven and add in your chopped fresh basil.
  • Using a fork, mash the feta and stir it together with the tomatoes to form a sauce as shown in the video.
  • Add your zoodles immediately to the still very hot baking dish, and toss well to combine with the sauce. Your hot tomato/feta sauce should warm your zucchini noodles nicely.
  • Garnish the pasta with extra fresh basil and freshly ground black pepper, if desired.
  • Serve immediately and enjoy!

2 Zucchini
1 Yellow Onion
1 teaspoon Granulated Sugar
1 teaspoon Fresh Thyme
2 tablespoon Unsalted Butter
1/4 cup Beef Broth
2 teaspoon Worcestershire Sauce
1 cup Fontina Cheese
to taste Salt and Pepper

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Spiralize the Zucchini (2) to make 2 1/2 cups of zucchini noodles.
  • In a skillet preheated to medium heat, melt Unsalted Butter (2 tablespoon). Place Yellow Onion (1) into skillet and cook for a few minutes.
  • Add Salt and Pepper (to taste), Granulated Sugar (1 teaspoon), Worcestershire Sauce (2 teaspoon), and Fresh Thyme (1 teaspoon). Stir and cook for another couple of minutes.
  • Add Beef Broth (1/4 cup) and cook until onions are golden brown about 12 minutes. Make sure to stir occasionally to keep the onions from burning.
  • Next, spray an 5 X 8 baking dish with non-stick cooking spray. In a large bowl combine Zucchini Noodles and French onion mixture. Pour the French onion zoodle mixture into the dish and garnish top with Fontina Cheese (1 cup).
  • Place in the oven and bake for about 20 to 25 minutes or until golden brown. Remove from oven and cool slighlty before serving. Garnish with fresh thyme if desired.
  • Serve and enjoy!

  • In a colander set over a bowl, toss zoodles with 1 tablespoon of kosher salt. Let zoodles drain of excess moisture while you cook the chicken and onions.  Preheat oven to 400°. In a large skillet over medium-high heat, heat oil. Season chicken with salt and pepper and add to skillet, working in batches. Cook until golden, about 1 to 2 minutes per side. Remove chicken to a work surface.  Return skillet to medium heat and melt butter. Add onion and season with salt and pepper. Cook, stirring occasionally, until caramelized and jammy, about 20 minutes. Increase heat to medium-high, stir in sherry and thyme and simmer until almost completely reduced, about 2 minutes. Melt cream cheese into onion mixture and remove skillet from heat.  Use a clean dish towel (or several paper towels) to squeeze as much moisture as possible out of the zucchini noodles. Thinly slice chicken. In a large bowl, stir drained zucchini noodles and sliced chicken into onion mixture. Transfer to a baking dish. Top with cheese.  Bake until bubbly and slightly golden, about 20 minutes. If you’d like to develop a more golden top, broil on high for 2 minutes.
