Cheese Stuffed Yuca are a party appetizer that can't be beat! Delightful little flavor bombs with the BEST dipping sauce!

Number Of Ingredients 6

16 ounces frozen yuca, (1 pound)
1/4 pound mozzarella cheese, cut into ½ inch cubes
salt and pepper, to taste
oil, for frying
2 tablespoons guava paste
1/4 cup white vinegar, to taste

Steps:

  • Bring a large pot of water to boil. Salt the water (about a tablespoon) and add the yuca. Cook according to the package instructions, or until fork tender (about 15-25 minutes). Drain the yuca and remove the woody stems from the core. Season with salt and pepper and mash until smooth. Take a heaping tablespoon of yuca and flatten in palm of hand. Place a cube of cheese in center and pinch the yuca around the cheese to form a ball. Repeat with remaining yuca and cheese. To fry, heat oil over high heat. Oil should be about 1/2-inch deep. Add yuca and cook for 1-2 minutes per side, or until golden brown. Remove from oil and drain on paper towels. Serve with guava dipping sauce. For the sauce: Microwave the guava paste and vinegar until melted and stir until the consistency of barbecue sauce. Add additional vinegar if necessary, to thin.

To me, yucca is synonymous with comfort food and there are many ways that I like to make it. Sweet or hot, it’s always delicious and very versatile. If you are looking for a side dish that will please everyone and that pairs perfectly well with anything that you make, think about mashed yucca. Today I bring you a simple recipe with a little quartirolo cheese, which is very soft, creamy and will melt immediately in the warm puree. Its flavor is delicate and won’t overpower the yucca. If you can’t find this type of cheese, you can always use taleggio, and even though it has a stronger taste, it goes great with mashed yucca. The truth is that you can use whatever cheese you like. What are you waiting for? Get cooking! Find fresh yucca, peel it and cook it. You’ll have a delicious puree in less than an hour. Enjoy!

1 lb yucca, peeled and cut into large pieces
2 garlic cloves
Salt, to taste
1 tablespoon butter
1/2 cup quartirolo cheese, cut into pieces
Thyme sprigs, to taste

Steps:

  • Put yucca and garlic to a pot with water. Bring to a boil on high heat. Reduce heat to medium-high and when the yucca starts to soften, season with salt. Cook until the yucca is very tender.
  • Set aside a cup of the yucca water and drain the excess. Mash the yucca and garlic with a potato masher or mash with a fork. Return to the pot, add 1/2 cup of the water you set aside and butter. Stir everything while the pot is on low heat. Add the cheese and use a wooden spoon to mix it in. Add more salt, if needed. You can also add a little more water if needed.
  • Serve the mashed yucca and garnish with thyme sprigs. Enjoy!
