Cupcake Christmas Tree Recipe: How to Make It image

Heather McKinley of Mechanic Falls, Maine shared this minty twist on typical cupcakes, then our Test Kitchen arranged them in a tree shape for a pretty presentation. The star on the top of the tree and cute packages tucked beneath are a snap to make with colorful candies.

1 package devil's food cake mix (regular size)
1-1/2 cups mint chocolate chips
6 tablespoons butter, softened
2-2/3 cups confectioners' sugar
4 to 5 tablespoons milk
1/2 teaspoon vanilla extract
1/4 teaspoon peppermint extract
1 teaspoon baking cocoa
1/4 teaspoon green paste food coloring
Candy-coated milk chocolate miniature kisses
2 chocolate stars
12 Starburst candies

Steps:

  • Prepare cake batter mix according to package directions for cupcakes; fold in chips. Fill foil-lined muffin cups two-thirds full. , Bake at 350° for 18-24 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pans to wire racks to cool completely., For frosting, in a large bowl, cream butter and confectioners' sugar until light and fluffy. Beat in milk and extracts until blended. Transfer 2 tablespoons to a small bowl; stir in cocoa. Stir green food coloring into remaining frosting. , Frost 21 cupcakes with green frosting; arrange in a pyramid to form a tree. Decorate all but the top cupcake with miniature kisses for lights. Frost two cupcakes with chocolate frosting and place at base of tree for trunk; top each with a chocolate star. Save remaining cupcake for another use., With a rolling pin, roll two yellow Starburst candies flat; cut with 2-in. and 1-1/2-in. star-shaped cookie cutters. Press smaller star onto larger star; place on cupcake at top of tree. , For presents, roll five Starburst candies into 3x3/4-in. rectangles; cut each rectangle into four 3-in.-long strips. Place two strips widthwise on one whole Starburst candy; press together at base to attach. , For bow, form two strips into figure eights; press together in center and press onto wrapped candy. Repeat with remaining strips and remaining four whole Starburst candies. Place presents beneath cupcake tree.

I found a Christmas tree cupcake pan at a local supermarket and decided to make them using the Easy White Cake recipe from the recipe booklet which came with my new (Christmas gift) KitchenAid mixer. They were fun to make and messy to frost. LOL Having more than one pan would definately have speeded things up. I decorated the trees with some star-shaped Christmas candies. I also dropped some of the candies into the batter before baking, which gave some of the cupcakes a color-spotted inside. The round cake bits which resulted from cutting off the cupcake "humps" make nice, bite size, sandwich 'cookies' when put together with extra frosting. Spread the frosting on the flat side of one round and cover with another.

2 cups all-purpose flour
1 1/2 cups sugar
3 teaspoons baking powder
1/2 teaspoon salt
1/2 cup shortening
1 cup nonfat milk
1 teaspoon pure vanilla extract
4 egg whites

Steps:

  • Preheat oven to 350°F.
  • Combine all dry ingredients in mixer bowl.
  • Add shortening, milk and vanilla.
  • Mix for about 1 minute.
  • Stop and scrape bowl.
  • Add egg whites.
  • Beat until smooth and fluffy.
  • Fill greased and floured cupcake molds about halfway.
  • Bake in preheated oven for about 20 minutes, or until toothpick inserted into center comes out clean.
  • Remove from oven.
  • Slice rounded"humps" from cupcakes.
  • Cool on wire racks.
  • Frost with green frosting and decorate.

  • Cut Kit Kat Thins in half crosswise. Place decorating sugar in shallow bowl. Tint 1 cup frosting light blue and spoon into resealable plastic bag. Spread some plain buttercream on top of 1 cupcake, using offset spatula to make smooth and flat on top. Roll edge of cupcake in sugar to coat. Place 4 pieces Kit Kat on top of cupcake, cut sides facing each other, leaving open space in middle. Snip small corner (about 1/4 inch) from resealable bag and pipe a few circles in center of cupcake as blanket. Repeat with remaining cupcakes. Place cupcakes in refrigerator until ready to assemble. For trees: Draw 6-inch wavy line on piece of paper. Add a few small branches on both sides, leaving bottom area clear. (This end will go into cupcake.) Line 2 cookie sheets with waxed paper. Place template under waxed paper. Place candy melts in small bowl and microwave in 10-second increments, stirring after each, until smooth. Spoon into resealable bag. Snip small corner (1/8 inch) from bag and pipe lines of candy over template, repeating several times on trunk to resemble bark. Quickly add a few green sprinkles to ends of each branch while candy is still wet. Add 1 red candy as ornament on
    1 branch. Repeat to make 12 trees. Refrigerate until set, about 10 minutes. When ready to serve, remove cupcakes from refrigerator and place on serving platter. Use toothpick to poke small hole in center of each cupcake. Carefully remove chocolate tree from waxed paper and press plain end into center of cupcake. Repeat with remaining trees and cupcakes.
