BLADE STEAKS WITH MUSHROOMS RECIPE | EPICURIOUS

Blade Steaks with Mushrooms Recipe | Epicurious image

Top blade steaks — great for a weeknight supper — are inexpensive and cook in just minutes.

Provided by EPICURIOUS.COM

Yield Makes 4 servings

Number Of Ingredients 11

4 (1/2-inch-thick) top blade chuck steaks (1 1/4 pounds total)
1/4 teaspoon salt
1/8 teaspoon black pepper
1 tablespoon olive oil
1 tablespoon unsalted butter
10 ounces cremini or white mushrooms, cut into 3/4-inch-thick wedges
1 tablespoon finely chopped shallot
1/4 cup balsamic vinegar
2 tablespoons soy sauce
1/2 cup plus 2 teaspoons beef broth
3/4 teaspoon cornstarch

Steps:

  • Pat steaks dry and cut 3 (1-inch-long) slits, 1 inch apart, across center cartilage (to keep meat from curling), then sprinkle steaks with salt and pepper.
  • Heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then cook steaks, turning over once, until meat is just medium-rare, 4 to 6 minutes total. Transfer steaks to a platter and cover loosely with foil.
  • Add butter to skillet and sauté mushrooms and shallot, stirring frequently, until mushrooms are browned and tender, about 4 minutes, then transfer to platter with steaks.
  • Add vinegar and soy sauce to skillet and simmer, stirring and scraping up any brown bits, 2 minutes. Add 1/2 cup beef broth and simmer 2 minutes.
  • While sauce simmers, stir cornstarch into remaining 2 teaspoons broth in a cup. Stir cornstarch mixture into sauce and simmer, stirring, 1 minute. Return steaks and mushrooms, along with any juices accumulated on platter, to skillet and simmer, turning steaks over in sauce, until just heated through, about 1 minute.

CHUCK BLADE STEAKS WITH HERB WINE SAUCE RECIPE | EPICURIOUS

Chuck Blade Steaks with Herb Wine Sauce Recipe | Epicurious image

Chuck blade steaks are a wonderful cut — luxurious flavor at a bargain price. They may appear under different names — flatiron or book steaks, for instance — in your butcher case, but they're easy to spot: Neat ovals that are slightly larger than your palm and bisected by a slender white ribbon — of gristle.

Provided by EPICURIOUS.COM

Yield Makes 4 servings

Number Of Ingredients 9

4 (1/2-inch-thick) top chuck blade steaks (18 oz)
1 teaspoon salt
1/2 teaspoon black pepper
3 tablespoons unsalted butter
1 tablespoon olive oil
1 large shallot, finely chopped
1/2 cup dry white wine
3 tablespoons finely chopped fresh chives
2 tablespoons finely chopped fresh parsley

Steps:

  • Pat steaks dry and sprinkle both sides with salt and pepper.
  • Heat 1 tablespoon butter and oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then sauté steaks 3 minutes per side for medium. Transfer steaks with tongs to a plate and keep warm, loosely covered.
  • Add remaining 2 tablespoons butter to skillet and cook shallot over moderate heat, stirring, until softened, about 2 minutes. Remove skillet from heat and carefully add wine and any meat juices that have accumulated on plate with steaks. Simmer until reduced by half, about 3 minutes. Remove from heat and stir in herbs and salt and pepper to taste.
  • Serve steaks with sauce poured over.

A top blade steak is best prepared by braising the meat, which provides a very tender piece of meat. It is also excellent when it is grilled or broiled, especially if the meat is marinated first. If this cut is to be used in stews, realize that a piece of gristle runs the length of the steak, which is difficult to remove with several cuts.
