Diner-style meatloaf | Recipes | WW USA - Weight Watchers image

Ketchup, Worcestershire, and egg white add meaty umami flavor and moisture to this healthier spin on meatloaf made from a mix of ground turkey and turkey breast in place of the fattier beef-pork-veal combo that is a diner menu mainstay. Another healthy trick: Dry mustard and dehydrated garlic powder add loads of flavor to the mixture without additional sodium. Serve this with cauliflower puree and braised hearty greens like kale or collards.

1 medium Uncooked onion(s) finely chopped
1 medium Sweet red pepper(s) finely chopped
1 pound(s) Uncooked 93% lean ground turkey
1 pound(s) Uncooked extra lean ground turkey breast lean
1 cup(s) Ketchup divided
0.5 cup(s) Seasoned breadcrumbs
1 large Egg white(s)
2 Tbsp Mustard
1 tsp Worcestershire sauce
1 tsp Garlic powder
0.25 tsp Table salt
0.25 tsp Black pepper freshly ground

Steps:

  • Preheat the oven to 400ºF. Place the oven rack in the center of the oven. Spray a baking sheet with cooking spray.
  • Spray a large nonstick skillet with cooking spray and set over medium heat. Add the onion and bell pepper; cook, stirring occasionally, until softened, about 5 minutes. Remove from the heat and let cool 10 minutes.
  • Blend together the ground turkey and turkey breast, the onion mixture, 1/2 cup of the ketchup, the bread crumbs, egg white, mustard, Worcestershire sauce, garlic powder, salt and pepper in a large bowl. Transfer the mixture to the baking sheet and shape into a 5×10-inch loaf, about 2-1/2 inches thick. Spread the remaining 1/2 cup ketchup over the top of the meat loaf. Bake until a thermometer inserted into the center of the meatloaf registers 165ºF, about 45 minutes. Remove from the oven and let stand 10 minutes before slicing.

Turkey meatloaf is a favorite in our house! This healthy meatloaf recipe made with lean ground turkey is easy and delicious.

Number Of Ingredients 9

1/4 cup plus 2 tbsp ketchup (I use organic)
2 tsp Worcestershire sauce
1/2 small onion (minced)
1 tsp olive oil
1.3 lb ground turkey (99% or 93% (I prefer 93))
1/2 cup seasoned whole wheat or gluten-free breadcrumbs (I like 4C)
1 large egg
1 tsp marjoram
1 teaspoon kosher salt

Steps:

  • Preheat the oven to 350F.
  • In a small bowl combine 2 tbsp of the ketchup with Worcestershire sauce.
  • In a small skillet, heat olive oil and onion on low heat until translucent, 3 to 5 minutes, remove from heat.
  • In a medium bowl combine the turkey, onion, breadcrumbs, egg, 1/4 cup ketchup, salt and marjoram.
  • Place mixture into a loaf pan or shape into a loaf and place on a baking pan. Spoon sauce on top.
  • Bake uncovered for 55-60 minutes, remove from oven and let it sit for 5 minutes before slicing.
