WILD GAME SUMMER SAUSAGE RECIPE | MEATEATER COOK

Wild Game Summer Sausage Recipe | MeatEater Cook image

There are three main reasons I love summer sausage. First, it’s virtually indestructible. You can bring it along on backpack hunts and camping trips without having to worry about it going bad or getting crushed inside your backpack or cooler. Second, I love it because it’s flavored heavily enough to...

Provided by Steven Rinella

Number Of Ingredients 16

8 lbs. game meat, cut into 1-inch cubes
2 lbs. pork fatback, cut into 1/2-inch cubes
6 tbsp. kosher salt
4 tbsp. dextrose
2 tsp. curing salt (often sold as pink salt # 1)
1-1/2 tbsp. mustard seeds
1 tbsp. dry mustard
2 tsp. garlic powder
2 tsp. freshly ground black pepper
2 tsp. ground ginger
1 cup Fermento
1 cup water
Four 2-1/2-by-18-inch collagen casings

Steps:

  • While keeping everything ice cold (see methods for fresh sausage), combine the game meat, pork fat, and all of the other ingredients except for the Fermento, water, and casings in a large bowl.
  • Mix to combine with your hands. Work in small batches if you need to, and don’t be afraid to throw the meat back in the fridge or freezer, or into a cooler with ice, to get chilled again.
  • Using the 1/4-inch plate on your grinder, grind the meat mixture into the bowl set over ice.
  • Change out the grinder plate to the 3/16-inch plate and pass the mixture through the grinder again.
  • Meanwhile, dissolve the Fermento in the water and stir with a spoon.
  • Add to the ground meat mixture and again mix with your hands, or throw the meat mixture in the bowl of a standing mixer and mix on low, until it’s all incorporated.
  • Press a piece of plastic wrap over the surface of the meat, making sure there are no air bubbles. Then wrap the bowl with a second layer of plastic wrap and set it in the fridge for 2 days to ferment.
  • Make a little test patty and cook it up in a sauté pan to be sure you got the seasonings right. Adjust them if you didn’t. Then, using a sausage stuffer, stuff the sausage into the casings.
  • Let the stuffed casings rest in the fridge to dry out for 1-2 hours.
  • While the stuffed sausages are resting, soak a panful of applewood chips for 20 minutes.
  • Preheat the smoker to 112°-130°.
  • Set the pan of chips in the smoker. Lay or hang the sausages in the smoker.
  • Smoke for about 60 minutes at this temperature, then raise the temperature to 180°.
  • Smoke until the internal temperature reaches 150°, which will probably take 2-3 hours, depending on your particular smoker and the ambient temperature.
  • Keep refilling the pan of apple wood chips as they get low.
  • When the sausages are done, let them hang at room temperature for 1 hour to cool, then wrap well and refrigerate. They can be frozen for several months.

BOUDIN (BOUDAIN) RECIPE, A PORK AND RICE CAJUN SAUSAGE ...

Boudin (boudain) recipe, a pork and rice Cajun sausage ... image

Provided by Lisa Fain

Yield 20

Number Of Ingredients 19

2 pounds pork shoulder, cut into 1-inch pieces
1 celery rib, diced
1 medium yellow onion, chopped
4 cloves garlic, minced
1 bell pepper, seeded and chopped
1 tablespoon kosher salt
1/2 pound chicken livers
2 cups cooked rice
2 jalapeños, seeded and chopped
1 teaspoon dried thyme
1 teaspoon dried oregano
1 teaspoon paprika
2 green onions, chopped (green part only)
1/2 cup parsley, finely chopped
1 teaspoon black pepper
1/2 teaspoon cayenne
4 feet of hog casing, sized 32/35mm
1 tablespoon vegetable oil
A sausage stuffer

Steps:

  • Place the pork shoulder, celery, onion, garlic, bell pepper, and salt into a large pot. Cover with 2 inches of water, bring to a boil and then turn down the heat and simmer uncovered for 1 hour. After an hour, add the chicken liver to the pot and continue to cook for 45 more minutes or until the pork is tender.
  • Strain the meat and vegetables, reserving the liquid. Finely dice the meat and vegetables with a knife, in a food processor or in a meat grinder set for a coarse grind. Once diced, place meat and vegetables in a bowl.
  • Add to the bowl the cooked rice, jalapeños, thyme, oregano, paprika, green onions parsley, black pepper, and cayenne. Stir in 1 cup of the reserved cooking liquid and combine until the filling is moist and slightly sticky. If it appears too dry, add more of the reserved liquid. Taste and adjust seasonings, if needed.
  • To stuff into casings for sausage, first rinse the outside of the casing and then place it in a bowl of water for 30 minutes to soften. Drain the soaking water and then rinse the inside of the casing by placing one end on the kitchen faucet, turn the water on low and allow it to flow through the casing. The casing will blow up like a balloon—this is fine.
  • Lightly oil the stuffing horn on your sausage stuffer with vegetable oil. Tie a knot at one end of the casing. Take the other end and gently slide the entire casing onto the horn, leaving the knot plus an additional 4 inches hanging off the end of the horn.
  • Place the filling into the feeder and push it through until it starts to fill the casing. Go slowly at first and note that you’ll need to massage the casing as the meat goes through it so it fills the casing evenly.
  • Once you’ve filled the casing, to form links, pinch it every 5 inches and then twist it until it’s secure. You can then cut the casing to form individual sausages.
  • To cook, poke holes into the casing then then poach in boiling water for 10 minutes. You can also grill or smoke the boudin.
  • Alternatively, you can either serve the filling as a dressing, or you can roll it into walnut-sized balls, dip into finely crushed crackers and fry in 350 degree oil for 2 minutes or until brown to make boudin balls.

HOT ITALIAN VENISON SAUSAGE | MEATEATER COOK
Fresh sausages are perhaps the easiest and most approachable form of charcuterie. With a few pieces of equipment, you can make your own sausage at home instead of getting it from a processor. • Continue to sauté for roughly 10 minutes or until the peppers begin to soften. Pour in the red wine vinegar and the honey. Cook an additional minute, or until the liquids dissipate. I don’t like to overcook the peppers. I still want a slight crunch to the fennel strips. Season for salt and pepper to taste.
