ELOTE LOCO BURGER – PS SEASONING



Elote Loco Burger – PS Seasoning image

A bun in a million bite! Our thick Elote Loco Burger thinks its a taco on a bun! Top that with a chili parmesan corn fritter and open wide.

Number Of Ingredients 18

2 Lb Ground Beef- (4 burgers)
4 T Elote Loco Street Corn Blend
1/2 Cup Mayo
1/2 Cup Sour Cream
1 T Elote Loco Street Corn Blend
1 t Lime Juice
1/2 Cup Cotija Cheese- Shredded
2 T Cilantro- Chopped
4 Burger Buns
Lettuce, Tomato, and Onion
Corn Fritters:1 Package- Frozen Corn (12 Oz) Thawed
1/4 Cup Cornmeal
1/4 Cup Flour
2 t Elote Loco Street Corn Blend
1/2 Cup Cotija Cheese- Shredded
1 T Cilantro- Chopped
1 T Lime Juice
2 Eggs

Steps:

  • Pre heat the grill for your burgers. 
  • To make the fritters, combine all the ingredients listed for the fritters and gently fold together until well mixed.  
  • Heat a sauté pan over medium high heat with a little cooking oil. Use a 1/3 cup measure to scoop the corn fritter mixture and place it in the pan. Flatten into a cake shape with a spatula and cook through. About 3 minutes on each side or until golden brown and hot.  
  • Hold on a paper towel lined plate in the microwave to keep warm. 
  • Preheat the grill for the burgers. 
  • Make the burger patties and season generously with Elote Loco Seasoning. Grill them to desired temperature. 
  • Combine the sour cream, mayo, lime juice and 1 TB of Elote loco to make the sauce.  
  • Build the burgers with the lettuce, tomato and onion on the bottom bun, followed by the burger patty, sauce spread, shredded cotija cheese, a corn fritter and then a sprinkle of chopped cilantro.  
  • Napkins highly suggested.

A nod to one of Mexico’s most popular street foods, charred corn gets covered with mayonnaise, cotija, ancho chile powder and lime juice for a satisfying summer snack.

4 ears corn, shucked
Vegetable oil, for brushing
1/4 cup mayonnaise
1/2 cup crumbled Cotija cheese
Ancho chile powder, for sprinkling
Lime wedges, for serving

Steps:

  • Soak 4 wooden skewers in water, 30 minutes. Preheat a grill to high.
  • Insert a skewer into each ear of corn. Brush the corn with vegetable oil. Grill, turning, until charred all over, 8 to 10 minutes. 
  • Brush the grilled corn with the mayonnaise and sprinkle with the cheese. Sprinkle with chile powder and serve with lime wedges.
