I didn’t test a gluten-free breadstick. If you need one, try substituting the gluten-free flour mix by my colleague Melissa Clark for the wheat flour in this week’s recipes. These grainy breadsticks can be irresistible, but that’s all right -- they’re much healthier than the restaurant variety.

Yield Two dozen breadsticks

Number Of Ingredients 7

2 teaspoons active dry yeast
1 1/2 cup lukewarm water
1 teaspoon honey, agave nectar, malt extract or rice syrup
1/4 cup extra virgin olive oil
2 cups whole-wheat flour
About 1 1/3 cups unbleached all-purpose flour
1 1/2 teaspoons salt

Steps:

  • Dissolve the yeast in the water in a large bowl or in the bowl of a stand mixer. Stir in the honey, agave nectar, malt extract or rice syrup. Let stand for five minutes. Stir in the olive oil.
  • Combine the whole-wheat flour, 1 cup of the unbleached all-purpose flour and the salt. Add to the liquid mixture. If kneading by hand, stir until you can turn the dough out onto a lightly floured surface; knead for 10 minutes, adding flour as necessary to keep the dough from sticking to your hands and worktop. If using an electric mixer, mix at medium speed for 8 to 10 minutes. Add flour as necessary so that the dough comes away from the sides of the bowl. The dough should be elastic and just slightly sticky.
  • Lightly flour your work surface or brush with olive oil. Using your hands or a rolling pin, roll the dough into a 14-by4-inch rectangle. Make sure there is enough flour or oil underneath the dough that it doesn’t stick to the work surface. Brush the top with oil. Cover with plastic wrap, then with a damp kitchen towel. Allow to rise for 1 to 1 1/2 hours until nearly doubled. (If you need the workspace, lightly oil the underside of a sheet pan and place the dough on top.)
  • Preheat the oven to 400 degrees with the racks positioned in the middle and upper thirds. Brush sheet pans with olive oil. Cut the dough crosswise into four equal pieces. One at a time, cut each piece crosswise into six equal pieces. Roll each piece between the board and your hands, as if you were making it into a rope, until it is as long as the baking sheet. For a tighter strip, twist the strands from one end to the other. Place 1 inch apart on the baking sheets until you’ve filled two baking sheets. Continue to shape the remaining breadsticks while the first batch is baking.
  • Place in the oven, and bake 15 minutes. Switch the pans top to bottom and front to back, and bake another 10 minutes until the breadsticks are nicely browned (they will be darker on the bottom). Remove from the heat, and cool on a rack. Shape and bake any remaining dough as instructed.

Number Of Ingredients 7

1-1/3 cups water (70° to 80°)
3 tablespoons honey
2 tablespoons canola oil
1-1/2 teaspoons salt
2 cups bread flour
2 cups whole wheat flour
3 teaspoons active dry yeast

Steps:

  • In bread machine pan, place all ingredients in order suggested by manufacturer. Select dough setting (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed., When cycle is completed, turn dough onto a lightly floured surface. Divide into 16 portions; shape each into a ball. Roll each into an 8-in. rope. Place 2 in. apart on greased baking sheets., Cover and let rise in a warm place until doubled, about 30 minutes. Bake at 375° for 10-12 minutes or until golden brown. Remove to wire racks.

Just a couple turns of the wrist transforms ordinary breadsticks into lovely holiday fare. The key is to twist the dough no more than three times, otherwise the breadsticks will become too tightly wound and lose their subtle corkscrew shape.   • Dissolve yeast in warm milk in the bowl of a stand mixer fitted with the paddle attachment; let stand 5 minutes. Add butter and 2 eggs to milk mixture; beat at low speed 1 minute. Weigh or lightly spoon flour into dry measuring cups; level with a knife. Add 1 cup flour to milk mixture; beat at low speed until smooth, scraping down sides of bowl with spatula as needed. Remove paddle attachment; insert dough hook. With mixer running on low speed, add remaining 1 cup flour, 1 tablespoon at a time. Add 1/2 teaspoon salt; beat at low speed 5 minutes. Place dough in a large bowl coated with cooking spray, turning to coat. Cover and let rise in a warm place (85°F), free from drafts, 1 hour or until doubled in size. (Gently press 2 fingers into dough. If indentation remains, it has risen enough). Turn dough out onto a lightly floured work surface. Divide in half. Working with 1 portion at a time (cover remaining dough to prevent drying), roll into a 12- x 6-inch rectangle. Cut dough into 8 (12-inch) strips. Pick up each strip at both ends, and gently twist 3 or 4 times. Place twists 1 inch apart on a parchment paper-lined baking sheet. Repeat procedure with remaining dough portion. Cover and let rise 45 minutes. Preheat oven to 375°F. Combine 1 teaspoon water and egg white in a bowl; brush egg mixture over twists. Combine the remaining 1/2 teaspoon salt, sesame seeds, and remaining ingredients in a bowl, and sprinkle over twists. Bake for 12 to 15 minutes or until lightly browned. Cool.

If you like fluffy brown bread this is it. No white flour here. You can use any 100% whole grain wheat flour. I mill my own. This bread is not heavy like most 100% whole wheat breads. If it is you used too much flour and your dough was too stiff. If it flattens out and won't stand up you need more flour. The total amount of flour is usually about 6 1/2 to 7 cups. This recipe has been in my family for years and we all make it. We make a lot more now that we have powerful mixers and the hand kneading is bye bye.

  • When done turn the bread out of the pan to a rack to cool. You can eat it right away (a great time for real butter) don't wrap it until completely cooled. (Condensation will make it soggy) Put in tinfoil to store on the counter. If you put it in the refrigerator it will turn into a brick. Enjoy.
