"My sister and I like to bake this 'cool' mint cake when we were learning to cook...and I still enjoy making it today," reports Sue Gronholz of Beaver Dam, Wisconsin.

1 package yellow cake mix (regular size)
1/2 teaspoon mint extract, divided
1-1/2 cups cold whole milk
1 package (3.9 ounces) instant chocolate pudding mix
1 carton (8 ounces) frozen whipped topping, thawed
4 to 5 drops green food coloring

Steps:

  • Prepare cake mix according to package directions. Add 1/4 teaspoon mint extract to batter; beat well. , Pour into a greased 13x9-in. baking pan. Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool completely on a wire rack., In a large bowl, whisk milk and pudding mix for 2 minutes. Let stand for 2 minutes or until soft-set. Using the end of a wooden spoon handle, poke 24 holes in cake. Spread pudding evenly over cake. Combine the whipped topping, food coloring and remaining extract; spread over pudding. Cover and refrigerate for at least 2 hours.

A moist and dense mint-flavored buttermilk cake, with vanilla buttercream frosting.

Cook Time 25 minutes

Yield 12 slices

Number Of Ingredients 13

1 box white cake mix ((not prepared))
1/2 cup sour cream
1/2 cup buttermilk
1/2 cup milk
1 egg + 2 egg yolks
1/2 cup shortening
2 teaspoon peppermint extract
green food coloring
1 cup butter
1 tablespoon buttermilk or heavy cream
1 teaspoon vanilla
about 2 1/2 cups powdered sugar
white chocolate shavings for garnish ((optional))

Steps:

  • In a small bowl, combine sour cream, buttermilk, milk, and eggs.
  • In large mixing bowl, place cake mix, shortening, and half of the sour cream mixture. Mix well. Add remaining sour cream mixture, and mix well.
  • Add mint extract and food coloring. (I used a small squeeze of green gel food color.) Mix until combined. You may need to scrape down the sides and mix a second time.
  • Divide batter evenly between two greased 9-inch round cake pans, spreading evenly around each pan. Bake at 350F for 25-30 minutes, until a toothpick inserted near the center comes out clean. Let cool before frosting.
  • For frosting, whip butter for 2-3 minutes until fluffy and white. Add remaining ingredients and whip well, until smooth and combined.
  • Frost between layers, and around the outside of the cake. If desired, garnish with white chocolate shavings.
