Total Time 5 minutes

Prep Time 5 minutes

Yield 5-6 Cups, 2 serving(s)

Number Of Ingredients 2

6 cups all-purpose flour (white or wheat)
12 tablespoons cornstarch

Steps:

  • Measure out the amount needed for your recipe. I always measure out 6 cups of all purpose flour.
  • For every 1 cup of flour remove 2 Tbsp of flour.
  • Now add 2 Tbsp of Cornstarch for every 1 cup of flour. (replacing the tablespoons of flour taken out).
  • Sift 5-6 times and it's ready-to-use cake flour.
  • *To sift flour without a sifter just use a strainer by filling it with flour and tapping against the palm of your hand over a bowl.
  • (left-over flour can go back in the bag).
  • Always measure the flour that is needed after its sifted.

SELF-RISING BISCUITS - THE PIONEER WOMAN

Self-Rising Biscuits - The Pioneer Woman image

This is a very old, very easy biscuit recipe for those times you don’t have a second to waste.

Provided by Ree Drummond

Categories     baking    breakfast    main dish

Total Time 20 minutes

Prep Time 10 minutes

Cook Time 10 minutes

Yield 24 servings

Number Of Ingredients 6

2 1/3 c.

Whole Milk

3 tbsp.

White Distilled Vinegar

6 c.

Self-rising Flour, Plus More For Kneading

1 1/2 tsp.

Salt

3/4 c.

Lard (OR Butter OR Shortening OR A Combination)

Melted Salted Butter, For Brushing

Steps:

  • (Important note: You may substitute 2 1/2 cups buttermilk for the milk/vinegar mixture.)(Important note #2: If you use salted butter instead of shortening/lard, decrease the amount of salt you add.)Preheat the oven to 475 F.In a measuring pitcher, combine milk and vinegar. Stir together and set aside for 10 minutes. Note: You can use 2 1/2 cups buttermilk instead of the milk and vinegar if you have some on hand.In a large bowl sift together the flour and salt. Use a pastry cutter to cut in the lard (or butter or shortening or both) until the mixture resembles coarse crumbs. Pour the wet ingredients into the dry ingredients, stirring gently with a fork or wooden spoon until it all comes together. Flour the surface, then turn out the dough and knead 10-15 times, adding a little flour so it's less sticky. Roll out dough to 1/3 to 1/2 inch thick and use a biscuit cutter to cut medium to small circles. Place on a baking sheet 1/2 inch apart and bake for approximately 10 minutes, or until golden brown on top. Remove from oven and immediately brush on melted butter. To die for!***Baking time will vary depending on the size of the biscuit cutter you use. I made mini biscuits, which took about 9 to 10 minutes. Larger biscuits will take longer, so keep an eye on them as they bake.

FRIED FRUIT PIES - THE PIONEER WOMAN – RECIPES, COUNTRY ...
I made fried pies on my Food Network show Saturday morning.
From thepioneerwoman.com
Total Time 2 hours
Category dessert, main dish
  • ***Important: Be careful when frying with hot oil! If you have little ones in the house, put the pot of oil on the back burner.***To make the pastry, mix together the flour, sugar, and salt. Cut in the 1/2 cup of shortening until the mixture resembles coarse crumbs. Add 1 of the beaten eggs, stirring gently with a fork, then add the buttermilk, stirring gently until it all comes together. Form into a ball and refrigerate for at least 1 hour in a plastic bag. To make the pies, roll the pastry on a floured surface into a large rectangle, about 12 inches by 24-plus inches. Make sure the dough is rolled very thin! Using a pizza cutter or a knife, trim the edges to make a very uniform rectangle. Remove the scraps along the edge.Cut the rectangle in half across the middle, then make three cuts in the other direction so that you wind up with 8 smaller rectangles. Place a heaping tablespoon of pie filling on the bottom half of each of the rectangles, leaving plenty of room around the edges. Brush the other beaten egg around the edges of the half of the rectangle with the filling. Bring the top part of the rectangle over the bottom half, pressing lightly to remove air pockets. Press the sides to seal. Dip a fork in flour and crimp the edges gently so that they're extra sealed. Heat shortening or oil in a large pot over medium high heat until the temperature reaches 350 degrees. One to three at a time (whatever you're comfortable with) lower the pies into the oil using a slotted spoon or metal spatula. Cook until golden brown, about 3 to 4 minutes, turning it halfway. Remove to a paper towel-lined pan and repeat with the other pies.Sprinkle the pies generously with sifted powdered sugar. Serve warm!

WHEN TO SIFT FLOUR: BEFORE OR AFTER MEASURING
Nov 14, 2019 · Why We Sift Flour . Before milled flour became readily commercially available, bakers and cooks sifted flour to separate the flour from the chaff (corn or seed husk) and debris. Today's refined flour won't contain these unwanted elements, so if a modern recipe calls for sifted flour, it probably means that the recipe requires a more aerated flour …
