This light and spongy Latin American celebration cake is called tres leches, referring to the three different kinds of milk it includes. Serve sliced mango or pineapple alongside.

Unsalted butter for baking pan
1 cup all-purpose flour
1 1/2 teaspoon baking powder
1/8 teaspoon fine sea salt
5 eggs, separated
1 cup sugar, divided
1/4 cup whole milk
3 tablespoons pure vanilla extract, divided
1 (14.0-ounce) can sweetened condensed milk
1 (12.0-ounce) can evaporated milk

Steps:

  • Preheat the oven to 350°F. Lightly butter a 9x13-inch baking pan.
  • Sift together flour, baking powder and salt into a large bowl; set aside.
  • Combine egg yolks and 3/4 cup of the sugar in a large bowl and beat with an electric mixer on medium speed until pale yellow and airy, about 2 minutes.
  • Add whole milk and 1 1/2 teaspoons of the vanilla and beat until combined, scraping the sides of the bowl if needed.
  • Fold in flour mixture in three parts, stirring well after each addition; set batter aside.
  • In a second large bowl, beat egg whites on medium-high speed until soft peaks form.
  • Add remaining 1/4 cup sugar in two parts and beat until stiff peaks form.
  • Carefully fold egg white mixture into reserved batter in three parts, folding just until combined.
  • Gently transfer batter to the prepared pan and spread evenly with a spatula.
  • Bake about 20 minutes, or until cake is puffed and golden and a toothpick inserted into center comes out clean.
  • Cool cake completely in the pan on a wire rack. (Cake will shrink away from the sides of the pan as it cools.)
  • In a medium bowl, whisk together condensed milk, evaporated milk and remaining 1 1/2 teaspoons vanilla.
  • Pierce cooled cake all over with a fork or toothpick, then slowly pour milk mixture all over cake allowing it to soak in evenly.
  • Cover and refrigerate for at least 4 hours or overnight.
  • To serve, cut cake into squares and transfer to plates.

1 teaspoon baking powder
½ cup unsalted butter
1 cup white sugar
5 eggs
½ teaspoon vanilla extract
2 cups whole milk
1 (14 ounce) can sweetened condensed milk
1 (12 fluid ounce) can evaporated milk
1?½ cups heavy whipping cream
1 cup white sugar
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9x13 inch baking pan.
  • Sift flour and baking powder together and set aside.
  • Cream butter or margarine and the 1 cup sugar together until fluffy. Add eggs and the 1/2 teaspoon vanilla extract; beat well.
  • Add the flour mixture to the butter mixture 2 tablespoons at a time; mix until well blended. Pour batter into prepared pan.
  • Bake at 350 degrees F (175 degrees C) for 30 minutes. Pierce cake several times with a fork.
  • Combine the whole milk, condensed milk, and evaporated milk together. Pour over the top of the cooled cake.
  • Whip whipping cream, the remaining 1 cup of the sugar, and the remaining 1 teaspoon vanilla together until thick. Spread over the top of cake. Be sure and keep cake refrigerated, enjoy!
