Peanut Butter Bourbon Balls | What's Cookin' Italian Style Cuisine image

These no-bake alcohol-laced style cookie balls are made with Peanut Butter Bourbon. The bourbon is a delicious cousin to the popular Rum Ball which is a similar popular recipe

Number Of Ingredients 9

5 cups of Nilla Wafer crushed like breadcrumbs ( used 1 full 12-ounce box and 1/2  box of another)
2 cups finely chopped pecans or peanuts
2 cups chocolate chips melted
1 cup Peanut Butter Bourbon
3/4 cup powdered sugar ( use more if necessary up to 1/4 cup)
6 tablespoons of light corn syrup
Options for Rolling Sugars:
Roll them in a choice of powdered sugar, granulated white sugar, cinnamon /sugar combination, or unsweetened cocoa powder
Note: use your favorite kind of nuts, seeds, coconut, mini chocolate chips in this recipe you prefer

Steps:

  • Chop the nuts first.
  • Put the vanilla wafers through a food processor pulsing till fine crumbs.
  • Add both to a large bowl and mix together.
  • Melt the chocolate in a microwaveable glass bowl stirring until smooth and then add to the wafers and nuts.
  • Add the corn syrup.
  • Add the alcohol last and mix together evenly..
  • Make 1 inch balls place them on wax paper ( I used a melon ball scoop for even-sized balls).
  • Roll the balls in any of the above-mentioned sugars or cocoa powdered.
  • Store in airtight containers or freeze for up to 3 months in freezer bags.
  • Makes 6 dozen.
  • These taste best made two weeks in advance.
  • Note: if you added too much bourbon, just add a little more powdered sugar until it holds together.
