At its core a Mai Tai is meant to showcase great rum. In this recipe, we use a combination of white and aged or dark rums for the best of both worlds.

Steps:
- Combine both rums, lime juice, curaçao, orgeat, simple syrup, and reserved lime half in a cocktail shaker. Fill shaker with ice, cover, and shake vigorously until outside of shaker is very cold, about 20 seconds. Strain into a glass filled to the brim with crushed ice. Garnish with lime wedge and mint sprig.

- In a large pitcher, add the light rum, Jamaican rum, orange liqueur, lime juice, orange juice and orgeat syrup and stir until combined. Add crushed ice to rocks glasses, then pour the mai tai over the ice. Add a splash of grenadine to each, then garnish with an orange wheel, lime wheel and maraschino cherry.

I love Daiquiris and this is basically a classic Daiquiri with a few bells and whistles: orange curaçao, lime juice, almond syrup, amaretto, falernum, white crème de menthe, and absinthe. A whopping ten ingredients but it's more an OTT than a "simple is beautiful" cocktail.

Founded in 1914 by Harry Brown and J.C. Haley in Tacoma, Washington, the Brown and Haley Candy Company is one of the oldest confectioners in the country. Great drink! Mai Tai's are one of our favorite drinks. I have made many many versions and this one is a great version. I do think it is a MUST to add amaretto in this as well to get the almond flavor that Mai Tai's have. Also half of a freshly squeezed lime is great in it as well!
