Number Of Ingredients 33

About ? cup Shaoxing or dry sherry
About ? cup oyster sauce
3 tablespoons light soy sauce
2 tablespoons dark soy sauce   
1 round tablespoon cornstarch dissolved into a splash of warm water to make a slurry
2 teaspoons sugar
2 tablespoons dark sesame oil
2 inches ginger
thinly sliced and chopped
4 cloves garlic
sliced
chopped or grated
1 pound wide Chinese rice or wheat noodles
1 to 1½ pounds boneless
skinless chicken breasts and/or thighs
very thinly sliced 
A sprinkle of salt and ground white pepper or fine black pepper
3 tablespoons peanut or other neutral oil  
1 large red field pepper or 2 small
 quartered lengthwise
seeded and sliced
4 baby bok choy
thinly sliced
white bottoms and greens separated (or ½ Savoy cabbage
cored and thinly sliced)
2 bunches scallions
sliced on bias
whites and greens separated
1 package mung bean spouts
Toasted sesame seeds
optional
Hot sauce or chili oil of choice
to pass at table

Steps:

  • Bring a large pot of water to boil
  • While water boils, whisk up sauce in a bowl
  • Cook noodles to package directions and leave in strainer, then rinse in hot water to loosen when ready to toss with chicken
  • Season sliced chicken with salt and white pepper or fine black, place in bag or bowl and add about ¼ to ? cup of the sauce and marinate the chicken for about 5 minutes
  • Heat a large skillet over high heat with 2 tablespoons oil, 2 turns of the pan
  • Add the chicken in one layer to hot oil and brown, then remove to platter, cooking in batches if needed
  • Add remaining oil and stir-fry the peppers, bok choy white bottoms and scallion whites, 2 to 3 minutes, add sauce, chicken and half the bean sprouts, bok choy greens, half the scallion greens and the noodles, combine
  • Place noodles in bowls and top with sesame seeds, dot with hot sauce and garnish with remaining scallion greens and sprouts

So,it's basically an asia recipes.I just visit Malaysia,recently with my family and we went to Ipoh,Perak to meet our cousins there.My cousins bought us to a restaurant and order for us a chicken ho fun.She explained to us how Ipoh is famous of their hor fun (flat rice noodles). The star of this noodle dish is the silky-smooth flat noodles, or as the locals calls it, hor fun. She explained as well that the vendors may serve the hor fun in a clear chicken broth, or with chicken-and-shrimp broth.It's totally worth trying for chinese food lover.

8 7/16 cups water
1/2 chicken
1 1/8 pounds fresh prawns
vegetable oil
1 noodles pack fresh flat
chicken shreds, for garnish, optional
fried shallots for garnish, optional

Steps:

  • Firstly, prepare the broth. Peel the prawns and devein. Keep the prawn heads and shell for the broth later.
  • Bring water to boil in a stock pot. Add chicken and leave it to a boil before turning the fire down and simmer.
  • In the meantime, heat up vegetable oil in a wok and fry the prawn heads and shells until they turn golden. Remove from the wok and add fried prawn heads and shells into the stock. Soon, you will notice that a layer of red oil start to form at the top. Simmer for about an hour. During this time, you can also remove some chicken pieces for the chicken slices. Remember to adjust flavoring – if the stock is not tasty, add chicken stock. If it’s not salty, then add some salt.
  • Strain the stock and set aside. Blanch the prawn meat in the stock and after it has cooled, start to butterfly the prawns. Blanch the cut spring onion and set aside.
  • Remove the flat noodles and blanch in a pot of hot water for about 15 seconds. If you are using dry flat noodles, cook in a pot of hot water longer until it softens (but not too soft).
  • Put the cooked noodles in a bowl. Add a few pieces of cooked prawns, chicken slices and spring onion. Add the stock. Then garnish with fried shallots and serve immediately.
