Mushroom Buckwheat Groats Recipe: A Taste to Remember image

Buckwheats are a great substitute for wheat flour in bread and pancakes, but they can also be used as the main ingredient. Recipes vary from creamy porridge to crispy stir-fries and delicious desserts! Buckwheat is versatile enough that you could make about anything with this grain!

Number Of Ingredients 8

250 grams Buckwheat groats
1/2 tbsp butter or oil
1 medium onion
100 g garlic cloves
200 g button mushrooms
100 g smoked bacon
1 tbsp thyme
1/2 tbsp salt and pepper to taste

Steps:

  • First of all, wash buckwheat in cold water until the water becomes clear; then soak in hot tap water for about two hours or overnight. Rinse thoroughly before cooking!
  • Meanwhile, heat butter or oil over medium heat in a large pan. Add onion and garlic cloves; cook for about five minutes until soft or until fragrant!
  • Add button mushrooms, smoked bacon and thyme; season with salt and pepper to taste. Cook for another three minutes before adding buckwheat groats (250 grams). Stir well so the grains are coated in sauce.
  • Add three cups of water (750 ml) and bring to a rolling boil. Reduce the heat, cover with lid and simmer for about 20 minutes or until water is completely absorbed.
  • Season again if desired! Salt will add flavor but may also make buckwheat more difficult to digest so start by adding just ½ teaspoon of salt per cup of cooked grains.
  • Serve hot!
