3 cups chopped Vidalia or other sweet onion (about 1 large)
2 cups shredded Swiss cheese
2 cups mayonnaise
1/4 cup prepared horseradish
1 teaspoon hot pepper sauce
Fresh coarsely ground pepper, optional
Assorted crackers or fresh vegetables

Steps:

Preheat oven to 375°. In a large bowl, mix the first 5 ingredients. Transfer to a deep-dish pie plate., Bake, uncovered, until edges are golden brown and onion is tender, 25-30 minutes. If desired, sprinkle with pepper. Serve warm with crackers.

1 cup shredded pepper Jack cheese
4 ounces cream cheese, cubed
1/4 teaspoon dried thyme
2 cups chopped sweet onions, divided

Steps:

In a food processor, combine the cheeses, thyme and 1 cup onions; cover and process until blended. Stir in remaining onions. , Transfer to a greased 3-cup baking dish. Bake, uncovered, at 375° for 20-25 minutes or until bubbly. Serve with crackers.
