1/3 cup packed brown sugar
2 large apples, peeled and sliced
GINGERBREAD:
1/2 cup butter, softened
1/2 cup sugar
1/3 cup packed brown sugar
1 large egg, room temperature
1/2 cup molasses
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground cloves
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
3/4 cup brewed tea

Steps:

  • Pour butter into a 9-in. square baking pan; sprinkle with brown sugar. Arrange apples over sugar; set aside. , For gingerbread, in a large bowl, cream butter and sugars until light and fluffy. Beat in egg, then molasses. Combine dry ingredients; add to sugar mixture alternately with tea, beating well after each addition. , Pour over apples. Bake at 350° for 45-50 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before inverting onto a serving plate. Serve warm.

3 Golden Delicious apples, peeled, cored, and cut into 8 wedges each
2 tablespoons packed light brown sugar
1?½ cups all-purpose flour
¾ teaspoon baking soda
¼ teaspoon salt
1 teaspoon cinnamon
1 teaspoon ground ginger
¼ teaspoon ground cloves
6 tablespoons unsalted butter
? cup sugar
1 large egg
½ cup light molasses
½ cup hot water

Steps:

  • Preheat oven to 350ºF; grease an 8-inch round cake pan. In a skillet over medium heat, melt 2 Tbsp. butter. Add apple wedges; sprinkle with brown sugar. Sauté 5 minutes, until softened. Pour liquid into cake pan and arrange apple wedges in a single layer.
  • Sift flour, baking soda, salt, cinnamon, ginger and cloves. Beat 6 Tbsp. unsalted butter and sugar until fluffy. Beat in egg and molasses. Beat in 1/3 of flour mixture and hot water until smooth; repeat twice. Pour batter into pan; spread evenly over apples.
  • Bake for about 45 minutes, until a toothpick inserted in center of cake comes out clean. Let cool on a rack for about 10 minutes. Run a knife around pan edge to loosen, then invert cake onto a serving plate. Let cool to room temperature before serving.
