1 package (10 ounces) ready-to-serve salad greens
4 cups shredded cooked turkey
1 cup (4 ounces) crumbled blue cheese
1/2 cup sliced almonds
1/2 cup dried cranberries
1/4 cup chopped celery
1/4 cup chopped red onion
1 snack-size cup (4 ounces) mandarin oranges
1/4 cup orange juice
2 tablespoons sugar
2 tablespoons olive oil
2 tablespoons cider vinegar
Dash each salt and pepper

Steps:

  • In a large bowl, combine first seven ingredients. Drain oranges, reserving syrup, and place in bowl., In a small bowl, whisk together remaining ingredients and reserved syrup; toss with salad. Serve immediately.

2 cups frozen cheese tortellini (about 8 ounces)
1 pound ground turkey
2 medium zucchini, halved lengthwise and sliced
2 garlic cloves, minced
1-1/2 cups cherry tomatoes, halved
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon crushed red pepper flakes
1 cup shredded Asiago cheese, divided
1 tablespoon olive oil

Steps:

  • Cook tortellini according to package directions., Meanwhile, in a large skillet, cook turkey, zucchini and garlic over medium heat until turkey is no longer pink, 7-9 minutes, breaking turkey into crumbles; drain. Add tomatoes, oregano, salt and pepper flakes; cook 2 minutes longer. Stir in 3/4 cup cheese., Drain tortellini; add to skillet and toss to combine. Drizzle with oil; sprinkle with remaining cheese.

  • The day before: Tear or slice bread into 1/4" cubes and leave out overnight to dry out. (Alternately, place bread on baking sheets and bake at 200º for 20 minutes.) When you're ready to make the stuffing: Preheat oven to 350º and butter a large baking dish. In a large skillet over medium heat, melt butter. Add onion and celery and cook until soft and fragrant, 8 minutes. Stir in garlic, parsley, sage, thyme, and rosemary and cook until fragrant, 1 minute more. Season with salt and pepper.  Place bread in a large bowl and add skillet mixture. Toss to combine. In a medium bowl, whisk together chicken broth and beaten eggs and pour over bread mixture. Season generously with salt and pepper and toss until completely coated. Transfer mixture to prepared baking dish and cover with foil. Bake until cooked through, 45 minutes, then remove foil and cook until bread is golden, 15 to 20 minutes more.
