TURKEY FETTUCCINE CASSEROLE | JUST A PINCH RECIPES
With the upcoming holidays, and Thanksgiving being my favorite; I have been thinking about the leftover turkey and making my favorite casserole. This casserole is so good and everyone likes it, even the leftover casserole. It has both meat and vegetable, and can be used as a one dish meal. Just wanted to share if you want a different dish made from leftover turkey or chicken.

Steps:
- Melt butter, add flour stirring constantly. Add milk and chicken broth. Continue stirring and cook until thickened. Add remaining ingredients, except cheese. Put ingredients in a buttered casserole dish and top with cheese. Bake 25-30 minutes at 300 degree. (you may have to bake longer depending on oven)

- Cook fettuccine according to package directions. Meanwhile, in a large ovenproof skillet coated with cooking spray, saute the onion, celery and garlic in oil for 3 minutes. Add mushrooms; cook and stir until vegetables are tender. Stir in the milk, seasoning blend and salt. Bring to a boil. , Combine cornstarch and half-and-half until smooth; stir into skillet. Cook and stir for 2 minutes or until thickened and bubbly. Stir in Parmesan cheese just until melted. , Stir in turkey. Drain fettuccine; add to turkey mixture. Heat through. Sprinkle with mozzarella cheese. Broil 4-6 in. from the heat for 2-3 minutes or until cheese is melted.

- 1. Heat oven to 400°F. Oil 3-quart or 9- by 13-inch casserole dish. Cook pasta per package directions. 2. Meanwhile, heat 2 tablespoons oil in large skillet on medium. Add onion and cook, covered, stirring occasionally, until tender, 6 to 8 minutes. Add mushrooms and cook, tossing occasionally, until tender, 5 to 6 minutes. Stir in garlic and thyme and cook 1 minute. Transfer to large bowl and toss with spinach and parsley. 3. Wipe out skillet and heat remaining 2 tablespoons oil on medium. Sprinkle flour over top and cook, stirring, 1 minute. Gradually whisk in milk. Simmer, whisking often, until thickened, 4 to 5 minutes.
