0 Hy-Vee nonstick cooking spray
1 slice(s) of Hy-Vee turkey bacon
1 Hy-Vee large egg
0 Hy-Vee salt and Hy-Vee black pepper
2 slice(s) of Hy-Vee Bakery 10-grain bread
1 c. of arugula
2 slice(s) of tomato
1 slice(s) of Hy-Vee reduced-fat provolone cheese

Steps:

  • 1. Spray a skillet with nonstick cooking spray and heat over medium-high heat. Add turkey bacon and cook until crisp. Remove and set aside.
  • 2. Break egg into same skillet. Sprinkle with salt and pepper. Reduce heat to low; cook egg for 3 to 4 minutes or until white is completely set and yolk starts to thicken.
  • 3. Top one slice toasted bread with arugula, tomato slices, cheese, bacon and egg. Add remaining slice.

1 c. 2% milk shredded mozzarella cheese
1/2 c. chopped seeded tomatoes
4 Oscar Mayer® Turkey Bacon
1/4 c. chopped fresh basil

Steps:

  • Heat oven to 350 degrees F. Beat whole eggs, egg whites, and water with whisk in medium bowl until blended. Stir in 1/2 cup cheese, tomatoes, bacon, and basil. Pour into greased 9-inch pie plate. Bake 25 minutes or until puffed and golden brown. Sprinkle with remaining cheese; bake 5 minutes or until melted.

    Variation: Mini-Frittatas. Prepare egg mixture as directed; pour into 12 (2 1/2-inch) muffin cups sprayed with cooking spray. Bake 20 minutes; sprinkle with remaining cheese; bake 3 to 5 minutes or until melted. Makes 6 servings, 2 frittatas each.
