5 sheets Brick pastry
5 eggs
4.5 cups Edam cheese (grated)
2 tablespoons butter
3 tablespoons parsley (chopped)
1 teaspoon ground allspice
1 pinch Black pepper
0.5 teaspoon salt
Fat (for deep-frying)

Steps:

  • Beat 4 of the eggs with the parsley, allspice and salt. Separate the 5th egg and beat the egg yolk into the mixture.
  • Heat the butter in a non-stick frying pan, add the egg mixture and cook until set, stirring occasionally. Mix in the grated cheese.
  • Cut each sheet of brick pastry into 4 strips 5 cm wide.
  • Put a little of the cooked egg on each pastry strip quite near to the end. Then fold the pastry strip diagonally over the filling to make a triangle. Continue folding the triangle over onto the pastry strip until you reach the end of the strip. Brush the ends of the pastry with egg white and stick down.
  • Heat the fat to 180°C and deep-fry the filled pastries until nicely browned. Drain on kitchen paper and serve hot.

1 pound(s) ground lamb (can sub ground beef)
1 large onion, chopped
2 tablespoon(s) tomato paste
1/2 cup(s) dry red wine
1/2 cup(s) grated kefalotiri cheese (or romano)
1 - egg
1/2 pound(s) butter, melted
1 pound(s) filo pastry

Steps:

  • Saute onion in a little butter until golden. Add the meat and stir until browned . Dilute tomato paste with a little water and add to meat. Add wine, cover and simmer for about 30 minutes, until meat is done and sauce is thick.
  • Remove from heat, allow to cool. Once cool, mix in grated cheese, egg, blending well.
  • Cut filo into strips of desired width. Brush each strip with melted butter using a pastry brush. Place one heaping teaspoon of filling on end of strip. Turn strip over filling to form a triangle. Continue folding from side to side until end of strip is reached. Continue to make triangles until all filling and strips are used. Place triangles close together, seam side down, on a greased cookie sheet.
  • Bake in a preheated 350 degree oven until golden brown. To bake frozen meat filled triangles, place immediately in a preheated 400 degree oven and bake until golden brown.
