TORTILLA SOUP WITH GROUND BEEF RECIPES

Steps:

• In a soup pot, heat oil over medium-low heat.
• Add the onion and cook, stirring occasionally, for 6 minutes until tender and translucent. Add the ground beef and cook, stirring and breaking up the beef, until browned and fully cooked.
• Add the green chiles, garlic, chili powder, cumin, and salt. Stir well and let cook for 1 minute. Add the tomato sauce, black beans, and broth. Stir and bring to a boil. Reduce heat to low and simmer for 20 minutes.
• To serve: Place 1/2 cup crushed tortilla chips in the bottom of a large soup bowl. Ladle hot soup over the tortilla chips. Add additional toppings to each bowl as desired: Diced avocado, chopped cilantro, diced jalapeno, and sliced radish.

• In a large skillet over medium high heat, combine the ground beef and onions and saute for 5 minutes, or until beef is browned. Drain excess fat and set meat aside.
• In a large pot over high heat, combine the broth, tomatoes, cumin and garlic. Add the cayenne pepper, chili powder and salt and pepper to taste. Bring to a boil and reduce heat to medium low.
• In a small bowl, combine the cornstarch with the water, stirring well until the cornstarch is dissolved. Add slowly to the soup, stirring constantly, to thicken.
• Add the reserved meat, corn and cheese to the soup and stir well. Finally, add the tortilla strips and allow to heat through.
