This is the date loaf I've been making for years, originally found in a FiveRoses cookbook, I think. I like to spread a little butter on slices of it and have it with tea.

3/4 cup boiling water
1 teaspoon baking soda
1 1/2 cups chopped dates
1 1/3 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1 large egg
3/4 cup packed brown sugar
3/4 cup chopped walnuts, toasted
1 teaspoon vanilla
1/4 cup melted butter, cooled to room temperature

Steps:

  • Preheat oven to 350F; spray a loaf pan with nonstick baking spray like Pam, and set aside.
  • In a small bowl or measuring cup, pour boiling water over baking soda so that soda dissolves.
  • Place dates in a mixing bowl and pour water/soda mixture over dates; let cool.
  • In a small bowl, stir together the flour, baking powder and salt; set aside.
  • In a different bowl, beat the egg with an electric mixer, then slowly add the brown sugar, beating well after each addition.
  • To the egg/sugar mixture, add cooled date mixture, toasted nuts and vanilla; mix well.
  • Stir in the dry ingredients.
  • Now, add the melted butter and mix well.
  • Pour this mixture into the prepared pan and bake in preheated oven for approximately 55 minutes, or until loaf tests done.
  • Let cool 10 minutes before removing from pan, then cool completely on a rack.

1/4 cup pomegranate molasses
2 tablespoons red wine vinegar
1 heaping tablespoon Dijon mustard
1 tablespoon honey, or more to taste
Salt
Freshly ground black pepper
3/4 cup extra-virgin olive oil
6 apples (Granny Smith, Gala, Fuji) any or a combination of all, skin left on, core removed and cut into 1/2-inch dice
2 cups baby spinach
2 heads endive, thinly sliced
1 cup toasted coarsely chopped walnuts
3/4 pound blue cheese, crumbled (recommended: Maytag, Danish, Cabrales)
Salt
Freshly ground black pepper

Steps:

  • Whisk together the pomegranate molasses, vinegar, mustard, honey and salt and pepper in a medium bowl. Slowly whisk in the olive oil until emulsified.
  • Combine the apples, spinach, endive, walnuts and blue cheese in a large bowl. Add the vinaigrette and toss to coat, season with salt and pepper, to taste.

  • In a medium bowl, whisk together flour and salt. Add chopped walnuts and stir to combine. Set aside. Preheat oven to 350 degrees F. In the bowl of an electric mixer fitted with paddle attachment, beat together butter, cream cheese, and sugar on medium speed until light yellow and fluffy, about 3 minutes. Scrape down sides of bowl as needed. Add vanilla and mix for 1 minute. Reduce mixer speed to low; gradually add flour mixture and mix for 20 seconds. Take bowl off mixer and finish mixing dough with a rubber spatula. Roll about 1 1/2 tablespoons of dough into a ball. Place on a parchment-lined baking sheet and gently press to flatten top. Repeat with remaining dough, spacing 1 inch apart. Bake cookies until light brown around edges, 14 to 16 minutes, rotating baking sheets halfway through. Transfer to a wire rack to cool.
