Easy Fluffy Buckwheat Pancakes - Inspired Taste image

These buckwheat pancakes are light and fluffy and made entirely from scratch. They’re not too sweet and are scented with vanilla, making them extra delicious. You can make these with 100% buckwheat flour or use a 50% buckwheat to 50% all-purpose flour blend. The 50-50 blend will make fluffier, more tender pancakes. In the first step of the recipe, we mix milk and vinegar (or lemon juice) together. This is an easy way to mimic buttermilk. The acid reacts with the baking soda and makes the pancakes light and fluffy. Instead of mixing the milk and acid, you can substitute buttermilk. Or, if you would prefer to use baking powder, we’ve provided tips in the notes section below. We call for unsalted butter in the recipe. You can use salted butter, but you may want to reduce the amount of salt used.

Number Of Ingredients 9

1 1/2 cups (187 grams) buckwheat flour (or use 50-50 blend of buckwheat and all-purpose flour, see notes)
1 1/4 cups (295 ml) milk, dairy and non-dairy both will work
2 tablespoons white vinegar or fresh lemon juice
4 tablespoons unsalted butter, melted, plus more for skillet
1 tablespoon sugar
3/4 teaspoon baking soda, see notes for substituting baking powder
1/2 teaspoon fine sea or table salt
1 large egg
1 teaspoon vanilla extract

Steps:

  • In a 2-cup measuring jug or bowl, stir the milk and vinegar (or lemon juice) together, and then set aside for five minutes. (This mixture mimics buttermilk, which when mixed with the baking soda later in the recipe, makes the pancakes fluffy.)
  • Meanwhile, whisk the flours, sugar, baking soda, and the salt in a medium bowl.
  • Whisk the egg and vanilla into the milk.
  • Make a well in the center of the flour mixture. Pour the milk mixture and melted butter into the well and use a fork to stir until you no longer see clumps of flour. It is okay if the batter has a few small lumps – it is important not to over-mix the batter.
  • Heat a large skillet (or use a griddle) over medium heat. The pan is ready if when you splatter a little water onto the pan surface, the water dances around the pan and eventually evaporates.
  • Lightly brush the skillet with melted butter. Use a 1/4-cup measuring cup to spoon batter onto skillet. Gently spread the batter into a 4-inch circle.
  • When the edges look dry, and bubbles start to appear and pop on the top surface of the pancake, turn over. This takes about 2 minutes. Once flipped, cook another 1 to 2 minutes or until lightly browned and cooked in the middle. Serve immediately with warm syrup, butter, and your favorite pancake toppings.

1 1/2 cups unbleached all-purpose flour
1/2 cup buckwheat flour
2 teaspoons baking powder
1/2 teaspoon baking soda
2 tablespoons sugar
1/2 teaspoon kosher salt
3 large eggs, room temperature
2 tablespoons unsalted butter, melted, plus more, room temperature, for serving
1 1/2 cups buttermilk
1 teaspoon pure vanilla extract
Safflower oil, for griddling
Pure maple syrup, for serving

Steps:

  • In a large bowl, whisk together flours, baking powder, baking soda, sugar, and salt. Make a well in center; add eggs, butter, buttermilk, and vanilla. Whisk until just combined but still lumpy (do not overmix). Let stand 15 minutes.
  • Preheat a large cast-iron or nonstick skillet or griddle over medium. Drizzle with 1 teaspoon oil; wipe with a paper towel to leave a thin film. Pour 1/4 cup batter per pancake onto skillet, leaving 1 inch between each. Cook until bubbly on top and golden on bottom, and beginning to lift from skillet along bottom edges, 2 to 3 minutes. Flip and cook on other side until golden on bottom, puffed, and just cooked through, about 1 minute more. Transfer to a baking sheet lined with a wire rack; keep warm in oven on low heat until ready to serve. Serve with butter and syrup.

  • Buckwheat Galettes Melt the butter. Put the flour into a large bowl, add the salt and stir to combine. Break the egg into the bowl, add 150ml of milk and beat to a smooth paste. Stir in the remaining 150ml of milk to make a thin batter. You can use the batter immediately or refrigerate for up to 12 hours if you wish. Lightly oil a frying pan so that the oil just covers the surface and get the pan nice and hot. Stir the melted butter into the batter. Pour or spoon some batter into the hot pan and roll it out to the edges. Cook the pancake on a medium heat for 2-3 minutes, loosening the edges, until the base is golden. Turn the pancake over and cook the other side for 1-2 minutes. Transfer the galette onto a plate. Repeat until the batter is used. Spinach and Egg Filling Pre-heat the oven. Rub some butter around the inside of an oven tray. Wash and drain the spinach and put it into a saucepan over a medium heat. As it starts to wilt, stir in the cream, season with salt and pepper and remove from the heat. Lay out the galette(s) on a clean work surface. Rub a little softened butter in the middle of each galette. Arrange the spinach in a 10cm/4” circle in the middle of the galette. Finely grate the Comté and sprinkle it over the spinach. Break an egg into the centre of the cheesy spinach circle. Fold the edges of the galette over to cover the egg white and form a square. Transfer the square galette onto the prepared oven tray. Bake for 5-12 minutes or until the egg is set. Serve immediately.

  • Turn the heat back on under the pan at medium. Drizzle the potatoes with a generous pour of olive oil and dot a few more pats of butter around the pan of potatoes. Season with salt. As the pan starts to sizzle, you will see the fat bubbling up and spitting a bit. Put a lid on the pan and seal tightly for a minute or two, giving the potatoes a little steam bath, helping to soften and cook the flesh. Remove the lid and swirl the pan with a little muscle to see if the potatoes are binding together as their starch begins to heat up. If they slip loosely all around the pan, tuck the slices back into the tight circle using a heat-proof rubber spatula and allow to sizzle and cook longer uncovered. Bump up the flame a little if the cooking sounds and looks listless — you want to hear sizzle.
