3 medium Russet potatoes Peeled
3 tablespoons Butter divided
2 cloves Garlic minced
1 tablespoon All purpose flour
1 1/2 cup Heavy cream
1/2 cup White cheddar cheese shredded
1/2 cup Jarlsburg cheese shredded
1/2 cup Pecorino Romano cheese grated
2 cups Potato chips
1 cup French fried onions

Steps:

  • "Preheat oven to 350 degrees. Thinly slice potatoes and place in ramekins or baking dish. In a saucepan melt 1 tbsp of butter over low heat. add garlic. Saute for 1 minute, then whisk in flour to form a roux. Stir in heavy cream and mix until roux has dissolved. Then add cheeses. Simmer the sauce for 5-8 minutes until all cheese has melted; then pour the mixture over the potatoes. Fill to the top leaving enough space for your topping. Add potato chips and fried onions to your food processor and pulse until the mixture is crumbly. Melt remaining 2 tbsp butter and add to topping. Mix well then sprinkle over potatoes. Bake for 3 to 40 minutes until topping is golden brown and potatoes are tender. "
