A weekly meal around here. Use your favorite brand of salsa or picante sauce in this recipe. It can be as mild or spicy as you like it. A nice change from the normal meatloaf.

1 1/2 cups tortilla chips, finely crushed
1 1/2 lbs lean ground beef
1 cup milk
2 cups salsa
2 eggs, beaten

Steps:

  • Preheat oven to 350.
  • Soak the crushed tortilla chips in milk until soft.
  • Combine chips with beef, 1 cup of salsa, and eggs. Mix thoroughly; I usually dig in with my hands at this point because it seems to work the best when mixing.
  • Pack into a greased loaf pan, or form into desired shape in shallow baking dish.
  • Spread remaining salsa over top of the loaf.
  • Bake for 1 hour.

1-1/2 pounds Ground Beef (93% lean or leaner)
1 can (8 ounces) tomato sauce, divided
1 cup soft bread crumbs
1 egg
1 small onion, finely chopped
2 teaspoons Worcestershire sauce
1 teaspoon dried thyme leaves, crushed
1/2 teaspoon garlic salt
1/4 teaspoon pepper
1 tablespoon packed brown sugar
1 teaspoon dry mustard

Steps:

  • Preheat oven to 350°F. Measure 1/4 cup tomato sauce, brown sugar and mustard into small bowl; set aside for topping. Add remaining tomato sauce, Ground Beef, bread crumbs, egg, onion, Worcestershire, thyme, garlic salt and pepper to large bowl; mix thoroughly but lightly.
  • Shape beef mixture into 8 x 4-1/2-inch loaf on rack in broiler pan. Spread topping over meatloaf. Bake in 350°F oven 1 hour or until instant-read thermometer inserted into center registers 160°F.
  • Let stand 10 minutes before cutting. Cut into slices. Four-Pepper Meatloaf Variation: Prepare meatloaf as above, adding 1/3 cup finely chopped green bell pepper, 1/4 teaspoon ground red pepper and 1/4 teaspoon ground white pepper to Ground Beef mixture.  Picadillo-Style Meatloaf Variation: Prepare meatloaf as above, omitting thyme and adding 1/3 cup finely chopped green bell pepper, 1/4 cup raisins, 1 teaspoon ground cumin and 1/2 teaspoon dried oregano leaves, crushed, to Ground Beef mixture.

  • Beat egg then mix together all liquid ingredients. Add seasonings to the liquid. Reserve 1/3 to 1/2 of the tomato sauce. Mix into meat and finely crumbled crackers. Don’t overwork the mixing. Shape into an oiled baking dish where it doesn’t touch the sides. We usually used a loaf pan or you can do it boule shaped in a pie plate. I top the meatloaf with the reserved tomato sauce and decorate with bacon slices and thin strips of bell pepper. Cook at 350-375 for 35-45 minutes or however you like the doneness. Bottom edges may get crisp. That part is delicious! A meat thermometer in it would not be a bad idea. I would not go beyond 170F. Partially tenting it with foil for part of the cooking time will keep the top from drying out too much or burning (if you decorate the top). I do like mine to get brown on the outside so I tend to use higher heat and remove the foil at least halfway through. Pour off any excess grease. A can of Rotel tomatoes make a nice substitution for tomato sauce, but you can still sauce the top. Use just enough crackers to hold it together. Don’t use too much tomato sauce or you will have to use more crackers and then the meatloaf will not be meaty enough. I put saltines in a ziplock bag and pounding the bejesus out of them with the flat side of a meat tenderizer, or use my fist, depending on my mood. Same thing for mixing all the ingredients together; sometimes it’s my fist… What fun; just like makin’ mud pies!
