Steps:

  • Make marinade: In a medium bowl whisk together garlic, jalapeño, coriander, cumin, lime juice, and vegetable oil and season with salt. Set half the marinade aside and add steak to half. Toss until coated. In a large bowl, add avocado, corn, red onion, and tortillas and toss with remaining marinade. Heat grill to high. Skewer kebabs and grill 8 minutes. Serve with hot sauce and squeeze with lime.

1 lb lean (at least 80%) ground beef
1 packet (1 oz) Old El Paso™ taco seasoning mix
1 can (4.5 oz) Old El Paso™ Chopped Green Chiles
1/2 cup shredded pepper jack cheese
3 cups masa harina
1 teaspoon salt
3 cups warm water
1/4 cup butter
Oil for frying

Steps:

  • Brown ground beef in skillet over medium-high heat. Drain meat, then stir in taco seasoning and water according to package; cook for 5 to 8 minutes to reduce liquid.
  • Stir in 1 can Old El Paso™ green chiles; cook for 2 minutes or until most of the liquid has evaporated and pan is dry. Let cool completely. Stir in cheese
  • Flatten some dough in your hand, then add a spoonful of your taco meat, then wrap the dough around the meat forming a ball.
  • Steam your tamale balls for about two hours.
  • Remove the balls from the steamer, dust with flour, and fry for a few minutes until browned on all sides.
  • Serve with salsa.
