This mozzarella stick-meets-zucchini fries hybrid is an awesome way to change up your appetizer game; not to mention, it’s a great recipe for getting picky eaters to munch on some vegetables. And if you’re finding yourself a little worn out on summer’s abundance of zucchini, stuffing the veggie with cheese and then deep-frying gives it an incredibly tasty transformation.

Number Of Ingredients 8

2 large zucchini
4 ounces mozzarella cheese, cut into 4 (1/2- x 1/2- x 2 1/2-in.) logs
½ cup (about 2 1/8 oz.) all-purpose flour
2 large eggs, beaten
? cup Italian-seasoned breadcrumbs
1 cup canola oil
1 teaspoon kosher salt
½ cup marinara sauce

Steps:

  • Cut ends off zucchini, and cut each in half crosswise. Using an apple corer, remove the center of each zucchini piece, and stuff each with 1 mozzarella log. Cut stuffed zucchini crosswise into 1/2-inch-thick rounds.
  • Place flour in a shallow dish. Place eggs in a second shallow dish, and breadcrumbs in a third shallow dish. Dredge each stuffed zucchini round in flour, and dip in egg, shaking off excess. Dip in breadcrumbs, pressing to adhere.
  • Heat oil in small saucepan over medium-high. Fry coated zucchini rounds 3 at a time, turning occasionally with a fork, until golden brown, about 3 minutes. Transfer fried zucchini rounds to a plate lined with paper towels to drain; sprinkle with salt. Serve with marinara sauce.

3 medium sweet potatoes, peeled
2 garlic cloves (inside the skin)
3 tablespoons olive oil
2 sprigs fresh rosemary
Flaky sea salt, to taste

Steps:

  • 1. Preheat the oven to 400?F. Grease a baking sheet with nonstick spray. 2. Cut each sweet potato into quarters, then cut each quarter into 4 fat wedges. (You'll get 16 wedges per sweet potato, 48 total.) 3. In a large bowl, toss the sweet potatoes and garlic cloves with the olive oil. Arrange the potatoes in a single layer on the prepared baking sheet. Add the rosemary and garlic cloves, and season well with salt. 4. Bake until the potatoes are golden brown and crisp, 20 to 25 minutes, flipping the potatoes halfway through baking. Serve immediately.
