Jello Cranberry Salad is a lovely and festive congealed salad that's great for holiday entertaining. It's especially nice for Thanksgiving or Christmas when traditionally turkey or ham are served. This salad is made with strawberry Jello, crushed pineapple, whole berry cranberry sauce, apples, and celery. It's so mouthwateringly good that even the pickiest eaters love this salad. Gluten free.

Ingredients

6 oz. box red or yellow Jell-O ((we used strawberry))
1 1/2 cups boiling water
1 cup crushed pineapple (well drained)
pinch salt
1 cup finely diced apples
1/2 cup finely diced celery
16 oz. can Ocean Spray whole berry cranberry sauce (or use fresh cranberries and sugar (see note below))

Steps:

Bring water to a boil.
Add Jello and stir to combine.
Remove from heat.
Stir in whole berry cranberry sauce until dissolved.
Add pineapple, salt, apples and celery and stir to combine.
Pour into serving bowl and refrigerate several hours or overnight.

Fabulous fruit salad with a cream cheese base that includes maraschino cherries, marshmallows, walnuts, pineapple and fruit cocktail.

Ingredients

29 oz. can fruit cocktail (reserve juice)
20 oz. can pineapple chunks (drained)
16 oz. jar maraschino cherries (drained and halved)
2-3 cups KraftJet-Puffed miniature marshmallows
1/2 cup chopped Diamond walnuts or pecans
4-5 tbsp. reserved fruit cocktail juice
5-7 drops McCormick red food coloring
8 oz. pkg. Philadelphiacream cheese (softened)
16 oz. container non dairy whipped topping
3 heaping tablespoons powdered sugar

Steps:

Mix cream cheese, whipped topping, powdered sugar, 5 tbsp. reserved fruit cocktail juice, and a few drops of red food coloring.
Add fruits, fruit cocktail, marshmallows and nuts. Stir.
Refrigerate overnight if possible.
