Strawberry Topping Recipe : Taste of Southern image

A delicious Strawberry Topping, perfect for Cheesecake, Ice Cream, Pound Cake, and lots of other things. Made from scratch with fresh picked Strawberries.

Total Time 20 minutes

Prep Time 10 minutes

Cook Time 10 minutes

Yield 3

Number Of Ingredients 4

1 pound fresh picked Strawberries
1/4 cup Granulated Sugar
1 Tablespoon Cornstarch
1 Tablespoon Lemon Juice

Steps:

  • Remove the stems and hulls from your berries with a paring knife.
  • Rinse berries under cold running water.
  • Cut berries into small pieces and place in a medium sized sauce pot.
  • Add sugar.
  • Add cornstarch.
  • Add lemon juice. Stir together well.
  • Place pot over Medium heat on stove top.
  • Add a Tablespoon or two of water if your berries are low in juice.
  • Stirring constantly, bring the berries to a low boil.
  • Reduce heat to Medium-Low, stir often and let the syrup thicken up. About 5 minutes.
  • Remove from heat when syrup has thickened.
  • Set aside to cool.
  • Enjoy!

2 cups strawberries (fresh or frozen)
1/2 cup sugar
1 teaspoon lemon juice
1 teaspoon vanilla or 1 teaspoon almond extract

Steps:

  • Combine all ingredients into a small saucepan.
  • Bring to a boil over medium-high heat; let boil for 5-10 minutes, or until thickened.
  • Remove from heat and stir in extract.
  • Puree in blender and strain out seeds, if desired.

  • Place all the ingredients in a medium saucepan over medium-high heat. Bring to a gently boil, stirring constantly, and allow the strawberries to cook for a good 5 minutes, or until the strawberries are very soft. Turn off the heat and use a potato masher to completely smush them to smithereens. Pour the mixture into a fine mesh strainer placed over a bowl. Use a spoon to stir the fruit so the liquid is forced through. Continue until most all of the liquid is in the bowl. Set the pulp aside in case you want to add some of it back to the finished sauce.Skim as much foam off the sauce as you can. Pour the skimmed sauce back into the same saucepan and boil again for 3 minutes over medium-high heat. Skim any more foam that has formed on the surface, then allow the sauce to cool slightly before pouring it into a pitcher or jar. Add a little of the pulp back into the sauce if you like the texture, or just leave it plain.Serve warm over vanilla ice cream, or refrigerate it to thicken and serve it cold. (You can reheat the sauce after refrigerating if you like.)
