100g minced pork
2 tsp Shaoxing wine
1 tsp soy sauce
½ tsp dark soy sauce
1 tbsp water
? thumb ginger (minced)
¼ tsp sugar
½ tsp cornstarch
3 eggs
1 cup broth
1 tsp sesame oil

Steps:

  • To Prep In a bowl, combine the minced pork and all of the remaining main ingredients together and mix well. Cover and let marinate for at least 20 mins. In another mixing bowl, combine the eggs, stock of your choice and sesame oil and mix thoroughly. Strain the eggs through a fine sieve to remove any clumps and transfer the eggs in to a ceramic serving bowl. To Cook Set up a steamer and when the water is rapidly boiling, reduce to a simmer and place in the bowl. Cover and cook for 15 mins. While the eggs steam, heat up a tbsp of oil in a frying pan over a high heat and when the oil is hot, transfer the marinated pork in to the pan. As the meat cooks, break it up in to smaller pieces. Continue to cook until the meat has been cooked through and has a slightly crunchy texture. Remove the pan from the heat and set aside. To Serve Transfer the cooked egg out of the steamer and let cool slightly before spooning over the minced pork and garnishing with spring onions and serve!

300 gram Pork
2 Salted Duck Egg
to taste Fresh Ginger
to taste Spring Onion
to taste Red Chili Pepper
2 teaspoon Sesame Oil
1 teaspoon Granulated Sugar
1/2 teaspoon Salt
1/2 teaspoon Light Soy Sauce
2 teaspoon Corn Starch
3 tablespoon Water

Steps:

  • Combine Pork (300 gram) with the reserved 1/2 Tbsp of egg white, Sesame Oil (2 teaspoon), Granulated Sugar (1 teaspoon), Salt (1/2 teaspoon), Light Soy Sauce (1/2 teaspoon), Corn Starch (2 teaspoon), Water (3 tablespoon) and dash of pepper. Stir the mixture with a pair of chopsticks in one direction for about 3 minutes till sticky. Then add some Spring Onion (to taste) and Red Chili Pepper (to taste) and mix well.
  • Place minced pork mixture in a steaming dish. Flatten the minced pork mixture and place the Salted Duck Egg (2) yolks with some Fresh Ginger (to taste).
  • Steam minced pork at high heat for about 12 - 15 minutes or till cooked. Then use a pair of scissors to cut the salted egg yolks into pieces.
  • Garnish with some cut spring onion and chilli and serve immediately.
