Mild flavored, flaky fish fillets. Any number of different types of fish will work, and you can increase the recipe easily. Try halibut, cod, salmon, red snapper, trout, etc. Serve with a white and wild rice blend.

6 (6 ounce) halibut fillets
1 tablespoon dried dill weed
1 tablespoon onion powder
2 teaspoons dried parsley
¼ teaspoon paprika
1 pinch seasoned salt, or more to taste
1 pinch lemon pepper
1 pinch garlic powder
2 tablespoons lemon juice

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Cut 6 foil squares large enough for each fillet.
  • Center fillets on the foil squares and sprinkle each with dill weed, onion powder, parsley, paprika, seasoned salt, lemon pepper, and garlic powder. Sprinkle lemon juice over each fillet. Fold foil over fillets to make a pocket and fold the edges to seal. Place sealed packets on a baking sheet.
  • Bake in the preheated oven until fish flakes easily with a fork, about 30 minutes.

If you have forgotten how delicious a great fillet of fish can be, try this: Steam it, with nothing on it. Drizzle it with olive oil and lemon juice. Sprinkle it with coarse salt. Eat.

1 1/2 pounds cod or other fillet, in two pieces, or 1 large halibut steak
2 tablespoons extra virgin olive oil
Juice of 1/2 lemon
Coarse salt to taste

Steps:

  • Put at least 1 inch of water in the bottom of a steamer, cover and bring to a boil. Lay the fish on the steamer's rack, making sure the rack is elevated above the water, and cover again. Steam 4 to 8 minutes, or until the fish is done. (A good-size halibut steak may take 10 or even 12 minutes.)
  • Remove the fish to a warm platter and drizzle with olive oil and lemon juice. Cut into serving portions, sprinkle with coarse salt and serve.

  • To Prep Make sure that the fish is properly cleaned (scales, guts, gills, etc. to be removed), thoroughly rinsed and then pat dry. Place the fish on a plate and drizzle 1 tbsp Shaoxing wine on top of the fish. Then spread half of the finely cut ginger strips onto the top of the fish. To Cook Prepare a wok or steamer and heat up enough water for steaming. As soon as it boils, place your plate of fish inside the wok on top of a steamer rack or on the steamer. Cover your wok or steamer tightly and steam it for 8 mins for a small fish, and a couple more mins for a bigger fish. While waiting for the fish, in a small bowl, mix the soy sauce mixture and set aside. As soon as the fish is done steaming, transfer it out from the wok or steamer. Drain and discard the fish water and ginger strips. Lay the remaining fresh ginger strips over the top across the fish. Using a separate pan, heat 2 tbsp of cooking oil over high heat, swirl around until it’s hot. Pour the hot oil over the steamed fish. Put the pan back onto the stove, add the soy sauce mixture and stir well. As soon as the sauce boils, pour the soy sauce over the fish. Top the fish with a handful of spring onions and coriander leaves and serve the steamed fish immediately with steamed white rice.

    1. Score the sea bass on both sides at 2cm intervals, cutting roughly 1cm deep, then place into the steamer tray of your oven (or see tip). Season the inside and both sides of the fish lightly with sea salt.
    2. Trim the spring onions and chilli (deseed if you like), then finely slice. Peel and finely chop the ginger, then pick the coriander leaves and finely slice the stalks.
    3. Mix the spring onions, chilli, ginger, coriander stalks and most of the leaves together on a board, then stuff and push into the cavity and scores in the fish.
    4. Squeeze over the lime juice, adding the squeezed lime halves to the tray. Hit it up with a splash of soy sauce, then cover with the lid.
    5. Fill the steamer pocket on the front of the oven with around 1 litre of water, then slot the steamer tray into the bottom of the oven so that the metal nozzle on the tray engages with the back of the oven. Set to steam for around 25 minutes, or until cooked to perfection.
    6. Serve on a bed of fluffy rice, drizzled with the juices from the bottom of the steamer tray, a drizzle of sesame oil and the remaining coriander leaves sprinkled over.
