DH was hungry for an omelette the other day and asked if I would make him one with Steak-Um, cream cheese and onions. I thought it was an odd combo but that was what he was craving. I have to say, it was to DIE for. He ate the first one and then asked for another. I told him I didn't think it was normal to eat 6 eggs in one day. DH likes thin omelettes so this recipe is made in our large skillet and will yield a thin omelette. If you like a thicker omelette, use a small skillet.

Number Of Ingredients 5

3 eggs
3 tablespoons cream cheese
1/3 cup onion, chopped
4 slices Steak-ums
1 tablespoon butter

Steps:

  • In a large skillet, heat the butter on medium-high heat.
  • Add onions and cook until tender/translucent. Transfer to small bowl.
  • Add the cream cheese to the onions in the bowl.
  • In the same large skillet, cook the Steak-ums (about 3-4 minutes or until cooked through.
  • Strain the meat and add to the bowl with the onions and cream cheese. Mix well softening the cream cheese so it spreads easily.
  • Whip the eggs.
  • Wipe out the large skillet after cooking the steak and spray with Pam (you can use butter too) and heat on medium heat.
  • Add your eggs and cook until the eggs on the top are almost cooked.
  • Add the steak & cheese mixture to one side of the eggs. Fold over the side of the eggs on top of the mixture. Cook a minute or two and then flip.
  • Season with salt and pepper to your desire.

sirloin steak, thinly sliced

milk

shredded provolone

1 tbsp.

Steps:

  • In a large skillet over medium heat, heat 1 tablespoon olive oil. Add onions, peppers, and mushrooms and season with salt and pepper, then cook until softened, about 10 minutes. Move veggies to one side of skillet and heat remaining tablespoon oil. Add steak to empty side of skillet and season with salt and pepper. Cook until undersides develop a crust, about 2 minutes, then flip steak and cook 1 minute more for medium. Stir steak together with vegetables, then transfer to a plate. Make omelet: In the same skillet over medium heat, melt butter. In a small bowl, beat eggs and milk and season with salt and pepper, then pour half the egg mixture into skillet. Cook until eggs begin to set around edges, about 30 seconds, then use a spatula to gently lift around edges, allowing uncooked egg to flow to center. Once set, add a layer of provolone to one side of omelet, then top cheese with half the steak mixture. Top with another layer of provolone, then cover skillet with a lid and cook until melted, 1 minute. Use spatula to flip untopped side over to cover. Repeat with remaining ingredients for second omelet.
