Before I begin this post, I’d like to state for the record that I’m not from Philly. I’m not even from Pennsylvania.

Number Of Ingredients 12

8 oz. weight White Velveeta
1/2 tsp. Black Pepper
1/4 tsp. Cayenne Pepper
1/4 c. Milk
6 tbsp. Butter
6 whole Deli Rolls
1 1/2 lb. Thinly Shaved Good Quality Deli Roast Beef
1 whole Yelow Onion, Peeled And Sliced Thick
1 whole Green Bell Pepper, Seeded And Sliced Thick
1 whole Yellow Bell Pepper, Seeded And Sliced Thick
1 whole Red Bell Pepper, Seeded And Sliced Thick
Spicy Mustard, Horseradish, Worcestershire Sauce, Hot Sauce (optional)

Steps:

  • First make the cheese sauce by combining the Velveeta, black pepper, cayenne, and milk in a small pan. Heat over low heat, stirring occasionally, until it's melted and hot. Keep warm.Melt 2 tablespoons butter on a griddle over medium heat, then place the deli roll halves on the griddle until golden brown. Set aside. Heat 2 more tablespoons butter in a large skillet over medium-high heat. Throw in the roast beef and move it around with a spatula, breaking it up a bit as you go. Cook/warm for about a minute or so, then remove it to a plate and set it aside. Add the remaining tablespoons butter to the same skillet and throw in the onions and peppers. Reduce the heat to medium-low and cook the veggies until dark golden and soft, about 8 to 10 minutes. To build the sandwiches, place a pile of beef on the bottom half of each roll. Spoon cheese sauce over the beef. Top with peppers and onions, then top with more cheese sauce. Place the top half of the roll on top and serve immediately!Options: * Spread spicy mustard on the rolls before building the sandwiches* Mix horseradish with mayo and spread it on the rolls before building the sandwiches* Add a few dashes of Worcestershire or hot sauce to the meat and peppers while cooking.* Add prepared horseradish to the cheese sauce.

Michael's Famous Philly Cheese Steak Sandwich Recipe ... image

The secrets of a great cheese steak are the quality of the ingredients and the thinness of the raw beef. The beef is best cut into paper-thin slices on an electric slicer. If an electric slicer is out of the question (many home kitchen stores sell these small machines inexpensively), try our method below to achieve similar results.

Yield Makes 4 to 6 servings

Number Of Ingredients 8

1 1/2 pounds top round steak
1 large Vidalia or other sweet onion
4-6 bell peppers, any color
4 tablespoons extra-virgin olive oil
N/A Salt
N/A pepper
1/4 pound sharp provolone cheese, thinly sliced
4 to 6 soft hero rolls or hoagie rolls

Steps:

  • 1. Tightly roll the eye round steak into a torpedo or log shape. Wrap tightly in plastic. Place log in freezer for 45 minutes to firm the beef into a tight but not frozen texture.
  • 2. Remove plastic, and working quickly, use an electric knife to slice the beef into paper-thin strips, almost shaving the beef. If this does not work well, use a sharp knife and cut the beef into the thinnest slices possible, then flatten the slices using a meat tenderizer. Refrigerate slices until ready to cook.
  • 3. Peel and halve onion. Slice into paper-thin half moon pieces. Halve the peppers, remove and discard seeds, and then slice into thick wedges.
  • 4. Warm 2 tablespoons of the oil in a large skillet over low heat. Add onions and cook 8 to 10 minutes, until caramelized and softened, stirring frequently. Do not allow them to brown. Transfer onions to bowl; add pepper to same skillet, still over low heat. Cook peppers 10 to 15 minutes, until soft and tender, flipping often. Transfer to bowl with onions. Season onion-pepper mixture to taste. Cover bowl to keep warm.
  • 5. In a clean skillet, warm the remaining 2 tablespoons oil over medium heat. Cook the beef in 2 batches, until lightly browned and cooked through, stirring often. Add olive oil if necessary.
  • 6. To serve: Pile beef strips, peppers and onions and cheese slices inside a hero roll.

  • Portion the meat into four piles, and top each pile with 3 slices of the provolone. Continue to cook until the cheese melts (putting on the lid and adding a little water to the pan can help with this step).   • Preheat oven to 350°. On a large baking sheet, toss hoagie rolls with melted butter and garlic powder. Bake until lightly golden, about 15 minutes.  In a large skillet over medium heat, heat 1 tablespoon oil. Add onion and peppers and season with salt and pepper. Cook, stirring occasionally until soft, about 8 minutes. Stir in garlic and cook until fragrant, 1 minute more, then transfer mixture to a large bowl.  Increase heat to medium-high and heat remaining tablespoon oil. Add steak in a single layer, working in batches if necessary. Season generously with salt and pepper and let sear until bottom is deeply golden, 3 minutes. Flip, then sear the other side. Return vegetables to skillet with steak and stir in Worcestershire. Remove from heat. Grease a 9"-x-13" baking dish with cooking spray. Spread half the hoagie rolls on the bottom of the dish, then add in half the meat and vegetable mixture. Top with 6 slices provolone and repeat with remaining half of the hoagie rolls and meat and vegetable mixture. Pour broth over, then top with remaining 6 slices of cheese.  Bake until cheese is melty, 15 minutes. Garnish with parsley before serving.
