Baked Spiral-Cut Potato Chips Recipe - Recipes.net image

This recipe for baked spiral potato chips is great as a snack or side when you're craving potato chips, but don't want the ones from the store.

Provided by Andrea

Total Time 1 hours 10 minutes

Prep Time 20 minutes

Cook Time 50 minutes

Yield 4

Number Of Ingredients 8

4 roughly 20 oz in total, scrubbed clean skin-on medium potatoes
3 tbsp grated or powdered parmesan cheese
2 tbsp breadcrumbs
2 tsp paprika
1 tsp Italian seasoning
3 tbsp or cooking spray olive oil
to taste salt & ground black pepper
parsley

Steps:

  • Prepare a greased & lined baking sheet, & preheat your oven to 350 degrees F.
  • Combine the parmesan cheese, breadcrumbs, paprika, & Italian seasoning. Set aside.
  • Thread the potato onto a skewer, by pushing it from the bottom, going all the way to the top.
  • Place the potato firmly onto a chopping board, & carefully make a slice at a slight angle. Once it reaches the stick, hold the knife in place.
  • Slowly rotate the potato in the opposite direction, all the while holding your knife at a slight angle. Keep rotating to continue the slice.
  • Work your way down, all the way to its bottom. You can now set aside the knife once it reaches the bottom.
  • Carefully fan the potato onto the skewer, slowly stretching it.
  • Transfer onto a lined baking sheet. Brush the potatoes with olive oil, & dust with the spice mixture. You can also use a cooking spray as an alternative.
  • Roast for about 30 minutes, or until golden brown. Remove the baking sheet, & flip the potatoes.
  • Return to the oven, & continue roasting for another 20 minutes or until evenly browned on all sides.
  • Garnish with parsley & serve.

  • Preheat the oven to 375 degrees F. Mix together the butter and olive oil and use a little to lightly grease the bottom of a round 9 inch oven-safe dish. Use a mandoline, or a very sharp knife, and cut the potatoes into very then slices crosswise. (Try and keep the slices together to make it easier to assemble the dish) Arrange the slices in the dish as pictured, then wedge some of the shallots, garlic slices, and chopped rosemary between some of the potato wedges throughout the dish. Brush the dish with the remaining butter and olive oil and season with salt and pepper. Sprinkle any remaining rosemary on top, and bake for about 1 1/2 hours or until the potatoes are golden brown but tender when pierced with a fork. Sprinkle with Parmesan cheese immediately after removing it from the oven. Serve hot.
