SPINACH PANINI RECIPE | EATINGWELL
This warm panini recipe is an easy choice when you're preparing lunch for four. Each sandwich is loaded with a full cup of spinach and flavorful basil and feta cheese--so tasty!

Steps:
- Lightly coat an unheated panini griddle, covered indoor electric grill, or large nonstick skillet with cooking spray; set aside.
- Place 4 of the bread slices or 4 pita pieces on a work surface; divide half of the spinach leaves among bread slices or pita pieces. Top spinach with tomato slices. Sprinkle with pepper. Add red onion slices and basil. Top with feta and remaining spinach. Top with remaining bread slices or pita pieces. Press down firmly.
- Preheat griddle, grill, or skillet over medium heat or heat according to manufacturer's directions. Add sandwiches, in batches if necessary. If using griddle or grill, close lid and grill for 2 to 3 minutes or until bread is toasted. (If using skillet, place a heavy plate on top of sandwiches. Cook for 1 to 2 minutes or until bottoms are toasted. Carefully remove plate, which may be hot. Turn sandwiches and top with the plate. Cook for 1 to 2 minutes more or until bread is toasted.)

HEALTHY CHICKEN AND SPINACH PANINI | ALLRECIPES
This is my own personal recipe, I was trying to think of a quick and easy but healthy meal for myself. It's very fresh and tasty, and it's a great warm chicken panini for a cooler day!

Steps:
- Spray a skillet with cooking spray and heat over medium-high heat.
- Poke a few holes in the chicken and season with 1 teaspoon lemon juice, garlic powder, Italian seasoning, salt, and pepper. Add to the hot skillet and cook, flipping occasionally, until no longer pink in the center but not fully cooked, about 8 minutes. Remove chicken to a plate.
- Add onion, red peppers, and garlic to the hot skillet. Add more seasonings if desired, and cook until onion is translucent, about 5 minutes. Add chicken back to the skillet; cook and stir for 3 minutes.
- Preheat a panini maker and lightly oil both sides.
- Mix spinach in a bowl with remaining 1 teaspoon lemon juice. Add chicken and veggie mixture to the spinach and mix it around.
- Place a slice of bread on the preheated panini maker. Put chicken mixture on top, followed by Cheddar slice and remaining bread. Toast the sandwich until bread is brown and crispy and cheese it mostly melted, 4 to 6 minutes.
