This easy, Greek-inspired twist to the famous tortilla hack will have you drooling with the combination of feta and olives wrapped up in a delicious spinach wrap.

1 tablespoon Olive Oil
1 White Onion
3 clove Garlic
8 cup Fresh Spinach
1 handful Fresh Herbs
1/2 cup Feta Cheese
1 cup Green Olives
1 teaspoon Sea Salt
1/2 teaspoon Freshly Ground Black Pepper
1 dash Crushed Red Pepper Flakes
4 Tortilla
2 tablespoon Vegan Butter
2 cup Greek Yogurt
1/4 cup Dried Dill Weed
3 clove Garlic
1 teaspoon Salt
1/2 teaspoon Ground Black Pepper
1 Lemon
1 Cucumber
3 tablespoon Olive Oil

Steps:

  • To a medium-sized pan heat Olive Oil (1 tablespoon) for 30 seconds on low-medium heat. To the pan, add the White Onion (1) and cook on low-medium heat for 4-5 minutes. You simply want the onions to become golden so do not overcook or burn.
  • To the pan, add the Garlic (3 clove) and cook for 1 minute before adding the Fresh Spinach (8 cup). Let the spinach wilt down completely and cook down any excess liquid before adding in the Fresh Herbs (1 handful), Feta Cheese (1/2 cup), Green Olives (1 cup), Sea Salt (1 teaspoon), Freshly Ground Black Pepper (1/2 teaspoon), and Crushed Red Pepper Flakes (1 dash).
  • Cook everything down for another 5 minutes then remove it from the heat and let everything cool.
  • Prepare your Tzatziki Sauce by combining Greek Yogurt (2 cup), Dried Dill Weed (1/4 cup), Garlic (3 clove), Salt (1 teaspoon), Ground Black Pepper (1/2 teaspoon), the juice of a Lemon (1), Cucumber (1), and Olive Oil (3 tablespoon) in a large container. Mix until combined.
  • Place a large Tortilla (4) wrap on a flat surface and cut from the center to the edge of a wrap on one quarter.
  • Begin filling each side of the wrap with your spinach mixture then fold from the bottom left triangle, up the top left triangle. then over to the top right triangle and end at the bottom.
  • Preheat the pan with some Vegan Butter (2 tablespoon) and once melted cook the wrap for 2 minutes on each side on low heat. Watch this carefully as it can burn very quickly.
  • Enjoy with your Tzatziki, a fresh crumbling of feta, and more herbs!

1 large, gluten free, if needed tortilla
2 large egg whites
½ cup fresh or thawed from frozen spinach
4 chopped sun dried tomatoes
2 tbsp crumbled feta
¼ tsp salt
? tsp pepper

Steps:

  • On medium heat, coat a non-stick pan with oil or cooking spray. When hot, add egg whites with spices of choice. Fold over and cook both sides. Remove from the pan.
  • Add your fresh or thawed frozen spinach and cover for 1 to 2 minutes, until wilted. Set aside.
  • Place your tortilla on a large piece of parchment paper. Add eggs whites, wilted spinach, sun dried tomatoes and crumbled feta and wrap up.
  • If made fresh, cut in half or if prepared in advance, heat in a sandwich press or grill until warm.
