SPICY CHEESE FONDUE - HY-VEE RECIPES AND IDEAS

0.25 c. of Hy-Vee butter
0.25 c. of Hy-Vee flour
1 tsp. of Hy-Vee Worcestershire sauce
0.25 tsp. of Hy-Vee dry mustard
0.5 tsp. of cayenne pepper
1.5 c. of Hy-Vee skim milk
1 (8 oz) pkg Hoffman's pepper jack cheese, shredded
1 (8 oz) pkg Hoffman's super-sharp cheddar cheese, shredded
0 Melba snacks or Wholesome Harvest sweet wheat baguette, cut into bite-size pieces, optional

Steps:

  • 1. In a medium saucepan, melt butter. Whisk in flour, Worcestershire sauce, dry mustard and cayenne pepper. Gradually stir in milk. Bring to a boil over medium-high heat.
  • 2. Reduce heat to medium-low. Stir in cheeses. Stir constantly until cheese is melted.
  • 3. Transfer to a fondue pot and place over low heat or transfer to a slow cooker and keep warm on the LOW setting. Serve fondue with Melba snacks or bread, if desired.

2 cloves garlic, 1 halved,1 minced
1 cup dry white wine
8 ounces shredded monterey jack pepper cheese
1 tablespoon cornstarch
3 tablespoons tequila
3 tablespoons chopped cilantro
1/8 teaspoon dried ancho chile powder or 1/8 teaspoon regular chili powder (I used a bit more, use to taste)
crusty French bread, cubed
assorted raw vegetables

Steps:

  • Rub the inside of a fondue pot or earthenware casserole with the halved garlic; discard or leave pieces in the pot for stronger garlic flavor.
  • Pour the wine into the top of a double boiler over simmering water; heat wine to a simmer.
  • Add the cheese 1/4 cup at a time to the double boiler, stirring after each addition until all the cheese is melted, stir in cornstarch.
  • Add tequila, cilantro and chili powder, stirring until blended.
  • Carefully pour cheese mixture into fondue pot.
  • Place pot on the table, use bread, tortillas and vegetables for dipping into cheese.
