HALIBUT WITH SOY-GINGER DRESSING RECIPE - ANNABEL LANGBEIN ...

Halibut with Soy-Ginger Dressing Recipe - Annabel Langbein ... image

Annabel Langbein returns again and again to this savory, Asian-accented dish. The key is selecting dense, thick fillets of the freshest fish, so they stay moist throughout cooking. More Healthy Fish Recipes

Provided by Annabel Langbein

Total Time 50 minutes

Yield 6

Number Of Ingredients 11

1 tablespoon sesame seeds
1/4 cup plus 2 tablespoons soy sauce
3 tablespoons unseasoned rice vinegar
2 tablespoons mirin
2 tablespoons grapeseed oil
2 teaspoons Asian sesame oil
2 scallions, thinly sliced on the diagonal
1/4 cup finely julienned peeled fresh ginger (1 ounce)
Six 6-ounce halibut fillets, skinned
Freshly ground pepper
Steamed short-grain rice and steamed spinach or pea shoots, for serving

Steps:

  • In a small skillet, toast the sesame seeds over moderate heat, stirring a few times until golden, 3 to 4 minutes. In a small bowl, mix the soy sauce with the rice vinegar, mirin, grapeseed and sesame oils, scallions and ginger. In a large, shallow dish, brush the halibut fillets with half of the soy-ginger dressing. Cover and refrigerate for 30 minutes.
  • Preheat the oven to 450°. Transfer the halibut to a large, rimmed baking sheet and season with pepper. Bake the fish in the upper third of the oven for 10 to 12 minutes, or until glazed and just cooked through.
  • Spoon the rice into shallow bowls. Set the halibut fillets on top and spoon the spinach alongside. Pour the remaining dressing over the fish, sprinkle with the toasted sesame seeds and serve.

GRILLED GINGER SOY HALIBUT | JUST A PINCH RECIPES
This recipe belongs to a fellow member, Sher Bird. She had posted it on another cooking web-site we both belonged to a couple of years ago. This recipe is so flavorful, simple, easy and most ingredients you might already have on hand. Sher said, it is her family's favorite way to eat fish. She also uses the sauce for salmon on the grill. I hope you all enjoy this as much as I have. Sher, thank you so much for sharing your recipe, and thank you for permission to re-post.

  • Notes: Instead of mincing the garlic and ginger, I like to grate it. Seems the grating brings more flavor. I never add the salt I have never added the herbs I have made this with the honey or the brown sugar, very little taste difference. Actually, I used Splenda brown sugar. I have used the grill, oven broiler and grill pan on top of the stove to cook the fish for this recipe. They all work fine.
