3 large eggs
2 cups store-bought frozen grated coconut, thawed 
11/2 cups sugar 
1/2 cup buttermilk, well shaken 
1/2 cup (1 stick) unsalted butter, melted 
1 tablespoon all-purpose flour 
1 teaspoon vanilla extract 
1 deep-dish unbaked 9-inch pie shell, homemade or purchased 

Steps:

  • Preheat the oven to 350 degrees F. In the bowl of an electric mixer and using the whisk attachment, beat the eggs, coconut, sugar, buttermilk, butter, flour and vanilla until well combined. Your mixture may look curdled but keep beating on high until it comes together (it will still be chunky from the coconut).
  • Pour the filling into the pie shell. Bake until lightly browned, the center of the pie doesn't jiggle when shaken lightly and a toothpick inserted into the center comes out moist but not covered with custard, 45 to 50 minutes. The coconut will rise to form a top crust during baking. Set the pie on a wire rack and cool completely before serving, about 1 hour.

1-1/4 cups whole milk
1 cup sugar
2 cup sweetened shredded coconut
2 large eggs, beaten lightly
3 Tablespoons All-Purpose Flour
2 Tablespoon Butter, melted
1/2 teaspoon Vanilla Flavoring
1 unbaked pie shell 9 inch

Steps:

  • Place milk in a large mixing bowl.
  • Add sugar.
  • Add coconut.
  • Add eggs.
  • Add flour.
  • Add butter.
  • Add vanilla flavoring.
  • Mix until fully combined.
  • Pour mixture into 9 inch pie shell.
  • Bake at 350F degrees for 50-60 minutes.
  • Pie is done when knife inserted in middle pulls out clean.
  • Place on wire rack to cool.
  • Enjoy!

Refrigerate 30 minutes., In a large bowl, combine sugar and flour. Add the corn syrup, coconut, pineapple, eggs and vanilla; mix well. Pour into crust. Drizzle with butter. , Bake until a knife inserted in the center comes out clean, 50-55 minutes. Cover pie loosely with foil during the last 30 minutes if needed to prevent overbrowning. Remove foil. Cool on a wire rack. Chill before cutting. Store in the refrigerator.
