Sous Vide Egg Bites: Bacon & Gruyere image

Savory with bacon and rich gruyere flavor, these are easy enough to make for every day but something you could serve to guests for a decadent brunch. I like to make an entire package of bacon anytime I make it by laying it on a parchment-lined baking tray and baking at 400ºF/205ºC for 16 - 20 minutes, but you'll only need 3 pieces for this recipe. Keep extra on hand for other days, or when you're ready to make more egg bites!

Coffee Shop Copycat Egg Bites - Better Homes & Gardens image

Make breakfast egg bites just like the sous vide ones you find at the popular coffee shop chain by baking in a water bath, no special equipment needed. You can store the jars in the fridge up to three days for a satisfying grab-and-go breakfast.

Number Of Ingredients 9

Nonstick cooking spray
8 eggs
4 slices bacon, crisp-cooked and crumbled
½ cup fresh spinach, chopped
½ cup roasted red bell peppers, chopped
½ cup shredded white cheddar, Gouda, Gruyere, or Monterey Jack cheese (2 ounces)
½ teaspoon salt
⅛ teaspoon ground black pepper
Creme fraiche, chopped fresh chives, and/or bottled hot pepper sauce (optional)

Steps:

  • Preheat oven to 325°F. Coat six wide-mouth half-pint jars with nonstick cooking spray. Place jars in a 13x9x2-inch baking pan.
  • In a large bowl whisk together eggs, bacon, spinach, bell peppers, cheese, salt, and pepper. Divide among prepared jars. Place pan with jars on oven rack. Add warm water to pan to come halfway up sides of jars. Bake 35 to 40 minutes or until eggs are set,
  • Cool slightly. Top with creme fraiche, chives, and/or hot sauce, if desired.
