Sourdough starter recipe - BBC Food image

Natural yoghurt gives this sourdough starter recipe a helping hand by introducing a little friendly bacteria. To learn how to use this starter see our easy recipe for sourdough bread.

Provided by Patrick Ryan

Prep Time 12 hours

Cook Time 0 minutes0S

Number Of Ingredients 8

175ml/6fl oz skimmed milk
75ml/5 tbsp fresh, live, full-fat, plain yoghurt
120g/4oz strong white flour
180g/6oz strong white flour
100ml/3½fl oz water
40ml/3 tbsp milk
150g/5½oz strong white flour
150ml/5½fl oz water

Steps:

  • On day one, heat the milk in a saucepan over a gentle heat. Place the yoghurt into a bowl and stir in the warmed milk. Cover and leave in a warm place for 12-24 hours until thickened. Stir in any liquids that may have separated.
  • On day two, stir the strong white flour into the yoghurt, incorporating evenly. Cover and leave at room temperature (about 20C) for two days. The mixture should be full of bubbles and smell pleasantly sour.
  • On day four, add the measured flour to the starter with the water and the milk. Cover and leave at warm room temperature for 12-24 hours.
  • On day five the starter should be quite active now and be full of little bubbles. Remove half of the starter and discard. Add the flour and the water to the remaining starter and mix thoroughly. Cover and leave at warm room temperature for 24 hours.
  • On day six the starter should be ready to use. You can keep the starter at room temperature, but you will need to feed it daily. Combine equal parts of the starter, water and flour and mix thoroughly. You may have to discard some of the starter so that you do not end up with too much. Keep covered and use as needed.
  • If baking less often, keep the starter covered in the fridge, feeding it once every five days or so by mixing equal parts of starter, flour and water.

How to Make a Sourdough Starter | Sourdough | Recipes ... image

A sourdough starter is a paste made from a whole grain flour* and water that captures and develops wild yeasts to create the basis of leavening for sourdough bread making. This paste will need ‘feeding’ with flour and water about every 12 hours and must be kept in a warm place for 3 to 5 days to become active. Once the starter is active some of it is used to make a ferment which is eventually mixed with more flour and water to make breads such as a Sourdough Cob, Sourdough Spelt Wholemeal Loaf or Sourdough Pumpkin and Sunflower Bread. For additional information with hints and tips, please see our Guide to Sourdough Making and you may also find our Sourdough Starter Table helpful.

Number Of Ingredients 2

8-10 tbsp Doves Farm Organic Wholemeal Spelt Flour *
8-10 tbsp tepid water

Steps:

  • Starter – use this handy chart to help you keep track of your feeding times. On the first day, put one tablespoon of flour and one of water into a 500ml glass bowl and mix together. Wet a clean tea towel, wring it out well, lay it over the bowl and leave in a warm place for about 12 hours. After the 12 hours have passed, add another tablespoon of flour and another of water, mix together, cover with the damp tea towel and leave for another 12 hours. On day two (24 hours since beginning your starter), stir in a third tablespoon of flour and a third spoon of water, stir to mix, cover again with the damp tea towel and leave in a warm place for 12 hours. For the second feed of day two, add a tablespoon of flour and one of water, stir to mix, cover with the damp tea towel and leave in a warm place for 12 hours. For the first feed of day three (36 hours since beginning your starter), increase the feed by adding two tablespoons of flour and two of water, stir to mix. Re-dampen the tea towel if necessary, lay it over the bowl and leave in a warm place for 12 hours. On the second feed of day three, add two tablespoon of flour and another two of water, mix together, cover and leave for another 12 hours. At this point your starter should be bubbly and ready to create your ferment. If the starter is not showing bubbles, repeat the 12-hour flour and water feeding routine, and ensure the starter is kept constantly in a warm place. Click this link to find a handy Sourdough Starter Chart which when printed has space for you to enter the day and time that you feed your starter with flour and water and to help monitor progress. This Guide to Sourdough Making contains lots of hints and tips for successful sourdough bread making.

  • Once your starter is active, it usually peaks and becomes “ripe” for use about 6 to 8 hours after a feeding. To determine ripeness, it should look puffy, bubbly, active, and pass the float test: fill a small bowl with lukewarm water and drop a scant tablespoon of starter in. If it floats, you are good to go!

SOURDOUGH PIZZA DOUGH RECIPE - EASY - OONI UNITED KINGDOM
Master making sourdough pizza with this tried-and-tested method from Ooni Pizza Taste Tester Bryan Ford – a professional baker, pizza lover and Ooni user, and author of the baking blog Artisan Bryan (find him on Instagram as @artisanbryan). This recipe uses a combination of “00” and whole grain flours for pizza bases with good structure and depth of flavour. What is sourdough?Sourdough is a traditional method of making dough that uses a natural starter, or mother, to ferment any kind of dough, rather than using commercial, ready-made yeast that comes from a packet. It means the dough takes longer to prove and develop, and you get a great depth of flavour in your doughs. You can use the method for making anything from bread to pizza to croissants.Maintaining your sourdough starterNo matter what kind of dough you’re making – whether it’s for pizza or otherwise – a key part of prepping sourdough-based recipes is maintaining your sourdough starter.Keep your starter in a jar on your kitchen countertop, covered with a lid or a cloth with an elastic band wrapped around the opening. If you’re using your starter regularly to make dough, it’s best to feed it with water and flour every 1-2 days to keep it alive and active, so it’s ready to use anytime. To feed it, add equal parts flour (the same flour your starter is based on) and water to the starter and mix until fully incorporated. The starter will grow every time you do this, so each time you’ll need to remove a little bit of the starter before adding the fresh flour and water. If you need to leave your starter at home for a while or are unable to feed it for a period of time, seal it and place it in the fridge for up to 2 weeks. The cold temperature will make the starter go dormant, so it doesn’t need to be fed during that time. When you’re ready to use it again, continue feeding it every 1-2 days as normal.Making sourdough pizzaMakes 4 x 12” pizzas

  • Stretch, top & cook your pizzas!Once the cold prove has finished, bring the pizza dough balls back up to room temperature by removing them from the fridge and leaving the tray on your kitchen countertop for around 2 hours. It’s important they’re at room temperature before you start stretching the pizza dough, or it will be too tight and impossible to stretch.Once they’re ready to go, stretch, top and cook your pizzas! Check out all our pizza recipes for a huge range of topping ideas. To cook the pizza, fire up your Ooni pizza oven, and aim for 500˚C (932˚F) on the stone baking board inside.Using a small amount of flour, dust your Ooni pizza peel. Stretch the pizza dough ball out to 12”/16” and lay it out on your pizza peel. Top as desired, then slide the pizza off the peel and into your Ooni pizza oven, making sure to rotate the pizza regularly. Serve and enjoy!
