Best Soft Pretzel Bites - How to Make Soft Pretzel Bites image

Use canned biscuit dough for the best hack ever to make pretzel bites!

(16.3-oz.) can refrigerated biscuit dough

water

1/4 c.

baking soda

1

large egg, beaten

Coarse salt

2 tbsp.

butter

2 tbsp.

flour

1 c.

milk

2 c.

cheddar

Kosher salt 

Freshly ground black pepper

Pinch cayenne pepper

Steps:

  • Preheat oven to 425°. Line a large baking sheet with parchment paper and spray with cooking spray. Make the pretzels: Quarter each biscuit, then roll each piece into a ball. Using a knife, carve an X into each ball. In a medium saucepan, combine water and baking soda. Bring to boil then reduce to a simmer. Add balls and cook for 30 seconds. (The dough will float to top.) Remove with a slotted spoon and transfer to baking sheet, making sure the pretzels aren't touching. (Don't worry if the dough looks messy here! They'll completely transform in the oven.) Brush beaten egg over each pretzel, then sprinkle with coarse salt.  Bake for 10 to 15 minutes or until golden brown.  Meanwhile, make cheese sauce: Melt butter in a small saucepan over medium heat. Whisk in flour and cook for 1 minute. Stir in milk and bring to a simmer. When milk begins to thicken, stir in cheese, whisking constantly until sauce is smooth. Season to taste with salt, pepper, and cayenne. Serve with the pretzels.

1 tube refrigerated French bread dough
1 c. shredded mozzarella
1/2 c. freshly grated Parmesan, plus more for topping
1/4 c. baking soda
3 c. warm water
4 tbsp. melted butter
1 tsp. garlic powder
1 tbsp. chopped fresh parsley

Steps:

  • Preheat oven to 400° and line a large baking sheet with parchment paper. Divide dough into 6 pieces. Stretch and roll each piece into a long rectangle. Sprinkle mozzarella and a bit of Parmesan into the center of each rectangle. Roll the dough tightly, making sure no cheese is exposed, into a tight rope. Twist and shape the rolls into a pretzel shape and transfer to prepared pan. Add baking soda to a shallow bowl filled with warm water. Whisk until the baking soda is dissolved. Brush baking soda solution onto each pretzel. Let set until the pretzels have dried, about 10 minutes, then brush with melted butter. Sprinkle with garlic powder, more Parmesan and parsley. Bake until the pretzels are golden,18 to 20 minutes.
