STIR-FRIED SNAKE BEANS RECIPE | GOOD FOOD

The perfect accompaniment for Neil Perry's chicken kapitan.

2 tbsp vegetable oil
500g snake beans, cut into 6cm lengths
4 garlic cloves, finely chopped
1/2 tbsp caster sugar
30ml fish sauce
30ml fresh chicken stock
 

Steps:

  • Heat the oil in a wok, until it starts to smoke. Add the beans and stir-fry for about 1 minute. Add the garlic and stir until fragrant.

    Add the caster sugar, fish sauce and chicken stock, and stir-fry for another 30 seconds until liquid has slightly reduced. Check seasoning.

    HOT TIPS

    The beans in this stir-fry are delicious, but replace them with in-season asparagus and it is even more wonderful. Snow peas or bok choy are also fantastic stir-fried.

SNAKE BEAN STIR FRY RECIPE -

One of my originals. Snake beans are also known as yard-long beans. You can grow them yourself, or buy them in Chinese markets. Fresh green beans are a fine substitute. Golden Mountain sauce, found in Chinese markets, makes a nice substitute for soy sauce.

2 cups snake beans, broken in 2-inch pieces
1 sweet red pepper, thinly sliced
3 garlic cloves, finely minced
1/3 cup green onion, thinly sliced
1/2 cup button mushroom, sliced
1 -2 tablespoon soy sauce
2 tablespoons water

Steps:

  • Stir fry the beans and pepper 3 minutes. Add garlic and mushrooms, and fry 5 minutes. Add golden mountain sauce and water. Simmer, uncovered, until, water is parrtially absorbed and beans are saucy.

  • Heat a wok over high heat and add oil, then add garlic and stir-fry until light golden (2-3 seconds), then quickly add marinated pork, stirring to break up pork and prevent it from catching on the wok, until pork is cooked and juices have evaporated (4-5 minutes). Add snake beans and stir-fry until tender (3-4 minutes), reducing the heat to medium if they start to scorch. Season with soy sauce and salt to taste and continue to stir-fry until beans are soft but still hold their shape (2-3 minutes). Serve as a side dish to the mud crab curry.
