1 cup shortening
3/4 cup packed brown sugar
3/4 cup sugar
2 large eggs
1 teaspoon vanilla extract
2-1/4 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1-1/2 cups "extras" (any one or combination of the following: chocolate, butterscotch, toffee or peanut butter chips, chopped candied cherries or nuts)

Steps:

  • In a bowl, cream shortening and sugars. Add eggs and vanilla. Combine flour, salt and baking soda; add to the creamed mixture and mix well. Fold in 1-1/2 cups "extras". Shape into a 15x2-in. roll; wrap tightly with plastic wrap. Chill 2 hours or up to 1 week. , To bake, cut into 1/2-in. slices. Place 3 in. apart on ungreased baking sheets. Bake at 350° for 10 minutes. Cool 5 minutes; remove to wire racks.

Cookie
2 cups all-purpose flour
1 1/4 cups powdered sugar
3/4 cup Land O Lakes® Butter softened
1 large Land O Lakes® Egg
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
2 teaspoons lemon extract
1 teaspoon freshly grated orange zest
Sugar
1/4 cup sugar
4 drops yellow food color
2 drops red food color

Steps:

  • Combine all cookie ingredients in bowl. Beat at low speed, scraping bowl often, until well mixed.
  • Divide dough in half. Shape each half into 6x1 1/2-inch log. Wrap each in plastic food wrap. Refrigerate at least 2 hours until firm.
  • Combine sugar and yellow food color in bowl. Stir until well mixed. Remove 2 tablespoons sugar; add red food color to remaining sugar. Stir until well mixed.
  • Heat oven to 375°F.
  • Cut logs in half lengthwise with sharp knife. Roll 2 halves in yellow sugar and 2 halves in orange sugar. Cut into 1/4-inch slices. Place 1 inch apart onto ungreased cookie sheets. Bake 7-10 minutes or until edges are lightly browned. Cool completely.
